GERMAN CROQUETTES WITH MUSTARD SAUCE ' V" 2 cups (16-os. can) sauerkraut cup minced onions , 34 pound frankfurters 8 eggs 2 cups cooked lies' 1 cup grated Cheddar cheese 1 teaspoon salt teaspoon pepper ' 2 tablespoons water 1 cup fine dry crumbs Drain sauerkraut thoroughly, pressing out as much of the juice as possible. Put sauerkraut, onions, and frankfurters through the food grinder, using a medium blade. . Beat two of the eggs slightly. Add sauerkraut and frankfurter i aIn iV, mixture, rice, cheese, salt, and pepper; mix thoroughly. Shape into 12 croquettes, using about cup for each. : Combine remaining egg and ' water; beat slightly. Roll each croquette in crumbs, then dip iA egg mixture and roll again in crumbs. Fry in deep hot fat (375'F.) un til golden brown, about 8 minutes. ' To make sauce, combine cup salad dressing, V cup cream, 1 tablespoon lemon juice, and 3 tablespoons prepared mustard. Heat over boiling water. Serve over the hot croquettes. Yields six servings. Abernethy - Pierce Rites Chapel Hill The marraige of Miss Carolyn Joyce Pierce to Dr. Henry Walter Abernethy in Chapel Hill Saturday is of interest to many in the Pink Hill area in that she is a former graduate of the Pink Hill High School and lived on Pink Hill, Route 1, prior to her training in the Lenoir County School of Nursing and later taking post graduate work in obstetrics at New Jersey Medical Center. She was active in many worthwhile activities while at Pink Hill, and graduated with honors. The couple will reside in Charles ton, S. PINK HILL, N. C. ' S AOC Seeks Young Men For Training ' ' A recent change in requirements has resulted in an immediate need for Aircraft Observer Aviation Ca dets, according to Sgt C. T. Jerni gan, local Air Force recruiter. The Air Force hopes to secure a number of fully qualified observ er aviation cadets before the end of February. Those men who qual ify can : expect placement in a flight observer class as soon as pro cessing is .completed. The observer program includes training in such specialities as navigation, metero logy, electronics, engineering and bombardment. Observer aviation cadets are giv en approximately one year of the finest training anywhere and upon graduation they will receive com missions as second lieutenants, Sgt. Jernigan added. They will then be gin a three year tour of active ser vice with pay over $5,000 a year. The qualifications for aircraft ob server aviation cadet training are similar to pilot aviation cadet re quirements: applicants must be be tween the ages of 19 and 26 1-2. high school graduates, single, male citizens, and in excellent physical condition. Presbyterian School Narrowed To 5 Towns RALEIGH -r- The Board of Trus tees of the Consolidated Presby terian College, after four days of meeting here in Raleigh this week, selected Wilmington, Laurinburg, Rocky Mount, Fayetteville, and Lumberton for further considera tion as the future location for the college. The selection was made from a list of seventeen communities that have been seeking the college, all of them presenting their cases W for the full board of Trustees after being visited by special committees during recent weeks. Mrs. Kornegay stressed - thtf fact that- fruit jars can be used for freezing success fully as well as for canning and gave out leaflets for proof. Mrs. Irvin Kornegay,' Home Dairy leader, gave some helpful hints for many uses of milk and milk prod ucts. Mrs. Emmett Kelly told where and how to plant garden vegetables especially tomatoes. ' During recreation, time was spent looking at quilt blocks exhibited by different club members. The host ess served congealed salad, cookies and hot coffee to 22 members, and one visitor.
