Stuffing
Whether you make your own
stufing for the Christmas
turkey or buy ready - pre
pared stuffing, you can
add chopped cranberries, chop
ped dried apricots, raisins or
orange juice to( improve the
keeping quality of the mix
ture and to give it variety in
flavor. A study has recently
shown that these fruit ingredi
ents helped stuffing keep be
cause of the acidity they add
ed to the mixture.

Even with these additions,
stuffing should be kept cold
and refrigerated from the time
it is made until it is put in
to the turkey just before
the turkey goes into the oven.
Stuffing may be made the day
before Christmas, but it
should be kept cold until
used. If a moist stuffing is
preferred, the dry ingredients
and broth should be refriger
ated separately and then com
bined just before stuffing the
bird. The U.S. Department of
Agriculture advises that the
turkey should never be stuffed
until time to roast it.
If a very large quantity of
stuffing is to be made up
for a big bird, it may pay to
store it in two or more con
tainers in the refrigerator. It
chills faster in small quanti
ties. In one large container
cold may take a long time to
reach the center of the mix
ture. In large-quantity food pre
paration, it is considered good
practice to roast poultry un
stuffed and to take stuffing
separately in a shallow pan.
This permits rapid heat pene
tration in the oven, and also
saves time and labor in both
cooking md serving turkey.

and 53 cents in 1945 (the peak
war year.)
