Thaiticsgiving Day was spent at school this year. Appropriate exer cises were held in all the schools and a short day schedule was operated. This was done in the interest of the farm labor situation. Schools evened late this year on accoimt of gathering Hoke’s largest crop and the children will be needed on tkC^Shros early next spring. ’ ' Miss Mary F. Peele, Home Econom ics Teacher and J. W. Dowd, Teacher cf. Vocational Agriculture, helpied this week with the preparation for the “Store the Meat” campaign. Miss Peele attended meetings at Allendale and Rockfish: Mr. Dowi at Antioch. The Red Cross drive in the Hoke High School was quite a success. The total amount contributed was $31.58. The home room teachers and the amounts contributed are: Miss Gill, $6.00; Miss Adcock, $4.62; Mrs. Lester, $4.20; Miss Ken drick, $3.65; Miss Fisher. $2.30; Mrs. White, $1.87; Miss Belche, $1.85; Mrs McLean, $1.45; Miss Cress, $1.33; Mr. Dowd, $1.15; Mrs. Upchurch, $1.11; Mrs. Gore, $1.05; Miss Peele, $1.00. The school paper, 'The Hoke High Lights, was issued to its subscribers Monday, November 30. Pork, beef, veal, lamb and mutton will be rationed because there will not be enough of these meats for the armed forces if civilians eat all, they want. But C. F. Parrish, Extension poultry specialist of N. C. State Col lege, points out that poultry is not included in the Share.The-Meat pro gram. “Meats supply protein in the daily diet,” says Parrish, “and for all prac tical purposes poultry and meat are identical in food value. Eggs are t-i>h in protein. In addition^ eggs a/re in minerals and two of the B-vita- mins. “The yolks of eggs are especially rich in iron—the mdnMal itimt helps to form the red blood cells. They are a rich source of phosphorus—a good soiu-ce of thiamin and ribofla. vin, two of the B-vitamins.” The Extension specialist says that poultry meat and eggs are like other protein foods—they must be cooked slowly and at a moderate tempera ture. High temperatures for long pe riods of time shrink and toughen the proteins. The secret of cooking eggs or any of the meats is to use moder ate, even heat. I Parrish also emphasized that the color of the egg shell has nothing to do with egg quality. “A good egg may be brown or white,” he declared. The State College worker says that both broiler and egg production in 1943 will be above that of 1942. This year poultiymen are producing a to tal of 4,414 million dozens of eggs. The 1941 production was 3,829 mil lion dozens. U. S. production of chickens in 1942 is estimated at 3,- 118 million pounds, compared to 2,- 722 million pounds in 1941. .
