COMMENT
Whether for better or for worse some
thing have become so commercialized,
they are not natural anymore. But there
are some chickens in Rockfish that can
sing and cackle and crow, and for those
who do not know the difference a hen
sings when she is happy walking across
the yard, well she seems to be happy
anyway, cackles when she comes off her
nest and she clucks to her biddies. The
natural rooster crows for daybreak, at
the right time and any other time he
feels like it, just like he is proud of
himself.
Spinach is used most as a cooked
vegetable, but it also makes a delicious
salad. Most of the fresh spinach sold is a
crumpled leaf or savory type. Look for
rich, dark green color and clean, fresh
leaves with no decay, advises Rachel
Kjnlaw, extension food specialist, North
Carolina State University.
Snug-fitting lids on cookware hold
heat in the pot and speed up the
cooking process, thus saving energy. The
temperature inside a covered pan can be
as much as 20 degrees higher than in an
open pan.
Byrd Promoted
James E. (Jim) Byrd, Jr., a native of

E. Byrd, Sr., of Raeford, was a manager
in the telephone company's business
office in Charleston, S.C., before going
to Camden.
The 1962 Hoke County High School
graduate is a 1967 graduate of the
University of North Carolina at Chapel
Hill. Prior to joining Southern Bell's
marketing department in Columbia, he
taught chemistry in the public schools
in North and South Carolina.
LACKS MARKET
Beef cattle production is expected to
continue a gradual increase in North
Carolina, according to North Carolina
State University livestock experts, but
there is a major road-block to major
expansion. That is, the lack of a
competitive market for slaughter cattle.
