TIME IS AT HAND Have you checked your pressure canner gauge this year? If not you need to have it done now. Raeford hardware has the equipment to check your gauge. OPEN-KETTLE There just aren't any shortcuts when it comes to canning foods the safe way. And that's why we can't recommend the open kettle method of canning. You may have tried the open kettle method and had good luck with it. But there's no guarantee that you'll have good luck with it this canning season. Here's why. Heat - resistant bacteria aren't always present in the foods you carry home for canning. But if they do happen to be around, the food will probably spoil unless yo? use safe canning methods. The drawback to the open kettle n: 'thod of canning is that it seldom sterilizes food. And without suf ficient heat to sterilize food ? spoilage can result. Or the food might become contaminated with spoilage organisms on the way from kettle to jar. If that happens, the food will spoil - even if you've gotten a good seal. It aads up to this. Open - kettle canning is no substitute for the pressure canner and the boiling water bath.
