Choral Society Seeks Singers SOUTHERN PINES: The Moore County Choral Society has already welcomed a group of new singers at the first two rehearsals for their spring concert, but still seeks a few more, according to Colonel Martin Foster, member ship chairman. Colonel Foster stated "The re sponse from singers this season has been so good that we have no problem with total membership, which now stands at a record 92. Our concern is to further improve the high quality of our chorus sound by more precisely balancing the voice ranges. We could use somewhat more ground note strength, so would especially wel come basses. Also, the problem of balancing the softer alto tones against a large soprano volume is with us -- so altos are wanted. But we always benefit from good tenors and sopranos, so they, too, are still sought. "Our purpose is not only to 'increase the public awareness and appreciation of musical arts' but to add to the pleasure, fulfillment and musical expertise of our singers. One needs to have had some previous choral experience to be comfortable with us. but all, including the most advanced readers and soloists will find that they will grow musically under the expert tutelage of Robert A. Engel son. director. "There is still plenty of time left, as we have had only 2 out of 12 rehearsals before the May 30 concert at Pinehurst Hotel. Re hearsals are each Tuesday from 7:30 p.m. to 9:30 p.m. at Brownson Memorial Presbyterian Church, May Street. Southern Pines. Mr. Engelson further elaborated on his recent statement about the music for the spring concert by saying "I am still planning on a detailed announcement later, but can say that the chorus has enthusiastically accepted Brahms' 'Liebeslieder Walzer' (to be sung in English) and Mozart's 'Te Deum' as the main secular and sacred presentations, as well as the idea of closing the program with a group of patriotic songs in seasonal honor of Veterans and Memorial days. With other fine choral music to be announced later, we should have a diverse and very appealing pro gram." 'Celebration Of The Arts '82' April 3-9 During the week of April 3-9, the public is invited to visit J.W. Turlington Elementary School. Mrs. Mary Archie McNeill, di rector of cultural arts in Hoke County schools, capsulized the goals and expectations of the Arts Festival. "The Arts festival is truely a celebration of the arts, and it is an event in which everyone can par ticipate. Regardless of your age or interest, we have something special awaiting you," she said. Mrs. McNeill went on to explain that this coming together of the arts was made possible by a grant and "we're deeply appreciative of this grant because we will soon see our dream of an Arts Festival in Hoke County burst forth into a reality!" The fund comes from the Z. Smith Reynolds Foundation of Winston-Salem. Thursday night of last week Hoke County Beekeepers Associa tion met. The program was "Cook ing With Honey". The following are some of the honey hints and recipes 1 shared with the group. --It is easier if you use recipes that have been designed and tested for honey. --If you want to try some substitutions with your favorite recipes, success is more likely if you substitute honey for no more than one-third of the sugar. Add the honey with the liquid ingredients. -If the honey is quite acid, a pinch of soda will help to neutralize the acidity in baked products. The liquid called for will also need to be reduced by one tablespoon of each one-third cup honey used. ?Lower baking temperatures 25 degrees F. when substituting with honey in a recipe. You will notice that the products are browner -- lowering the oven temperature will help. --Honey is excellent to use in making yeast breads. Substitute it in equal portions. --Honey is often used in cooking holiday goodies because it keeps cookies, cakes and breads fresh longer. -It is said that adding two tablespoons of honey to your favorite cake mix will make it more tender and less crumbly. Add it as you beat the batter. -Because honey keeps products moist, it is difficult to make a crisp cookie. Cookies made with honey keep fresh and moist for long periods. They are excellent for mailing. --Honey crystalizes - that's its nature! Taste or purity is NOT affected... in fact it makes a deli cious crunchy spread in this form. To bring crystallized honey back to its natural liquid state, place container of honey in a pan of warm water (not hot) until crystals disappear. --When using honey in cooking, moisten the measuring spoon or cup first with water or oil. then measure the honey. This will eliminate sticking. --Mixed with lemon juice, honey tyVeclclinc} dade. i DECORATED C. CHEESE SURPRISE SALAD 1 cup fine cottage cheese (fluff if necessary) l/j cup chopped pecans (or walnuts) '/? cup mayonnaise (omit it desired, but use */j teaspoon salt instead) 2 cups diced apples 3 tablespoons honey Toss all ingredients together lightly, but thoroughly. Placc a scoop in a crisp lettuce cup. Garnish with cherry and parsley sprigs. LEMON HONEY SYRUP 1 cup North Carolina honey 2 tablespoons butter 2 tablespoons lemon juice Heat all ingredients together in a saucepan. Serve over French toast. HONEY ICECUBES Blend */j cup of honey with 2 cups very hot water and 2 table spoons lemon juice. Pour into ice cube trays and freeze at once. Crush and serve in iced tea or float in punch. SANDWICH SPREAD Mix together equal parts of honey, cream cheese and peanut butter. Makes a very good sand wich spread or to serve on crackers. Honey is good. Try it. you will like it!
