To have quality canned food, it is necessary to use the proper meth ods. Food spoilage is always a factor about which we need to be concern ed. One kind, botulism, is especi ally dangerous, for it can be present without bad taste and with no visible signs of spoilage. In fact it isn't known often times until someone, or in many cases, several become very ill. We are very tempted to use shortcuts in can ning, but the risks are too high! Mrs. Dolores Dial and Mrs. Minnie Simmons with the Exten sion Expanding Nutrition Program suggest the following: 1. Do use standard jars, especi ally for products to be processed under pressure. This eliminates jars in which you have bought mayonnaise, etc. unless it specified that it can be used for canning. 2. Use a large pot or canner as a boiling water bath for processing fruits, tomatoes, pickled vege tables. Use a pressure canner for processing low-acid vegetables (green beans, peas, butterbeans. squash, corn, etc.) 3. Jelly should have melted paraffin on top. 4. Leave Vi inch headspace in jar (1 inch for starchy foods). 5. Provide enough liquid to cover the product. b. Don't use products of various maturity or size in same container. 7. Don't leave spices, lemon peel, etc. in jar. K. Don't add artificial coloring to your canned product. 9. Do put a good product - right stage of maturity, clean - into your jars. 10. Do leave a ring on the jar when moving from one place to another, to avoid breaking the seal. IMPORT ANT : To be on the safe side, in canning tomatoes or toma to juice, add 2 teaspoons vinegar or lemon juice or Vj teaspoon citric acid to each quart. THE BEST PRESERVED PRODUCT IS THE ONE WHICH MAINTAINS MORE OF ITS NA TURAL SHAPE. COLOR. AND FLAVOR. ^/cctcU Locklear- Fowler Robin Fowler, daughter oj Mr. and Mrs .
