CHEESE BALLS 2 cups plain flour 2 sticks oleo 2 cups rice crispies 1 teaspoon salt Vi teaspoon red pepper '/jib. sharp cheese 1 cup nuts Combine, roll into small balls. Bake at 350 degrees. VEGETABLES 'N CHEESE '/? cup chopped onion 1 \0 V* oz. can condensed cream of celery soup 1 tablespoon margarine 1 cup ( shredded cheese 1 cup rice 1 10 oz. pkg. frozen mixed vegetables or 1 16 oz. can mixed vegetables, drained. In skillet cook chopped onion in margarine till tender. Add rice and 2 cups water; bring to boiling. Reduce heat; cover and simmer for 5 minutes. Add mix vegetables, celery soup and 1/8 teaspoon pep per. Cover and simmer 15 minutes more or till rice is tender. Stir in cheese .till melted. Makes 6 serv ings. CRANBERRY COFFEFjCAKE I cup (2 sticks) butter or margarine 1 cup sugar 2 eggs Vi teaspoon almond extract 2 cups sifted self-rising flour 1 cup (8 oz.) dairy sour cream 4 1 can (8 oz.) whole berry cranberry sauce Vi cup chopped nuts Confectioners Glaze (recipe below) A moist sour cream coffeecake, topped with pools of cranberry sauce. Bake ahead and freeze for a special holiday brunch. Heat oven to 350 degrees. Grease a 13x9x2 inch sheet cake pan. In large mixer bowl, cream butter. Gradually add sugar; beat until light and fluffy. Add eggs, one at a time, beating well after each addition. Mix in al mond extract. Stir in Hour alter nately with sour cream. Pour bat ter into prepared pan. Spoon cranberry sauce evenly over batter; spread slightly, but do not try to cover batter. Sprinkle with almonds. Bake 35 to 40 minutes or until cake pulls slightly away from a sides of pan. Drizzle with Glaze. Serve warm. NOTE: If using plain flour, sift 3 teaspoons baking powder and '/: teaspoon salt with flour. CONFECTIONERS' GLAZE 1 cup confectioners' sugar Vi teaspoon vanilla. 2 tablespoons milk Combine all ingredients and stir until smooth. At this time of year our thoughts begin to turn to that front burner that we will use to prepare our Christmas foods. We want to always think safety when we work with foods so let's think of the turkey. TURKEY IS An economical food. I A source of lean meal. A source of protein Convenient and delicious. SELECT A TURKEY Sized to meet serving needs. Protected by an intact plastic bag. That is young or mature and of either sex. d That needs basting or is self basting. Frozen or non-frozen. Nonstuffed or prestuffed. With desirable cooking aids: pop-up timer, roast in the bag, turkey lift, etc. Inspected for wholesomeness. Officially graded - A, etc. TURKEY MEAT QUALITY IS PROTECTED $ When a frozen turkey is thawed in cool temperatures (40 degrees F, or below) before roasting. When meat surface temperature is 55 degrees F or below. When roasted immediately after thawing. When nonfrozen turkeys are roasted within 3 to 4 days. THAW THE FROZEN TURKEY ( In its unopened plastic bag at refrigerated temperatures (40 degrees F. or below)- NOTE: A one stop method for prestuffed, frozen turkeys.
