Oik Km Front Bamtf By EUm S. Willis Home Ecoaomks Exteasioa Agent I had a phone call from Mrs. Bobby McBryde about the Orien tal Ginger Duck or Venison recipe that was in last week's paper. Pickled ginger root was called for and she had not been able to locate it. Fresh ginger root can be substituted - in fact that is what Mr. Rick Hamilton used at the workshop. Mrs. Juanita McAllister called to ask for African recipes - a scout leader had requested them. Thought you might be interested in these recipes also. BANANA FRITTERS 1 medium sized ripe banana 1/2 cup milk 1 tablespoon vegetable oil 1 egg 3/4 cup sifted all purpose flour 3/4 cup corn meal 2 teaspoons baking powder 3/4 teaspoon salt 2 tablespoons sugar In small bowl of electric mixer, beat banana until mashed. Add milk, oil and egg, beating to blend well. Sift together flour, corn meal, baking powder, salt and sugar. Stir into liquid ingredients, mixing just until blended. Let stand 5 minutes. Drop by table spoons into hot deep fat (375 degrees F.); cook about 2 minutes until golden brown, turning once. Drain on absorbent paper. Sprinkle with confectioners sugar. Serve warm. Makes 6 servings. DOUBLE CORN PUDDING 2 eggs, beaten 2 cups cream style corn 3/4 cup milk 1/4 cup corn meal 1/4 cup finely chopped onion 1/4 cup chopped celery 1/2 teaspoon salt dash pepper 2 tablespoons butter or margarine Combine eggs, corn, milk, corn meal, onion, celery, salt and pep per. Pour into buttered 8-inch square baking dish. Dot with but ter. Bake in preheated moderate oven (350 degrees F) 35 to 40 minutes or until knife inserted 1-inch from edge comes out clean. Serve hot. Makes 6 servings. SPICY LAMB KABOBS 3 slices bacon 1 medium sized onion, chopped 3/4 teaspoon cumin dash cayenne 1 teaspoon salt 1 bay leaf 1/4 cup lemon juice 1/2 cup syrup 1/4 cup water 1 clove garlic crushed 2 lb. lamb cut into 1 1/2 inch cubes Cut up bacon into bite-sized pieces. Fry until golden brown. Drain on absorbent paper, reserv ing 2 tablespoons drippings. Com bine cooked bacon, 2 tablespoons drippings, onion, cumin, cayenne, salt, bay leaf, lemon juice, syrup, water and garlic in large bowl. Add lamb, turning to coat evenly. Cover; refrigerate several hours or overnight. Thread lamb onto 3 long shisk kabob skewers. Broil over coals a total of about 30 minutes or in a preheated broiler 4 inches from source of heat a total of about 20 minutes, turning to brown and cook evenly on all sides. Meanwhile, combine a small amount of the marinade with 4 teaspoons all purpose flour in saucepan. Slowly add remaining marinade stirring until smooth. Discard bay leaf. Bring to boil, stirring constantly. Lower heat; simmer 5 minutes stirring occa sionally. Serve as glaze over cook ed kabobs. Makes 6 servings. Africma Dessert BOLO POL AN A (Cashnew-Nnt and Potato Cake) 9 egg yolks 3 medium sized boiling potatoes 2 tablespoons flour 2 cups roasted unsalted cashews, chopped 2 teaspoons orange peel 4 egg whites 3 sticks butter 2 cups sugar 2 teaspoons lemon peel Boil chopped patatoes and mash, set aside to cool. Grease and flour a 9" spring-form pan. Cream the 3 sticks of butter and sugar. Beat in the potatoes, cashew nuts, lemon peel and orange ped. Add egg yolks, one at a time, beating after each additional ingredient. Beat the egg white until stiff. Stir a heaping tablespoon of whites into the potato mixture. Then spoon the remaining egg white into the mixture and fold together gently. Pour the batter into the spring form pan, spreading out and (Continued on page SB) AP I** ?'
