Drain and sprinkle cornstarch over turkey and mix together. Fry turkey in very hot oil 4-7 minutes or until brown. Cook chicken 4-5 minutes. Turn to brown on all sides. Add celery, onions, water chestnuts and mushrooms. Cover and heat to simmer. Cook 8 minutes. Serve over rice. Serves 8 to 12. CHOCOLATE SHEET CAKE 2 cups sugar 2 cups flour Blend in mixer. 1 stick butter 1 cup water 1 cup oil 4 tablespoons cocoa Bring to rapid boil, pour over flour mixture and mix well. 2 eggs beaten 1 teaspoon soda 1 teaspoon vanilla 1/3 cup buttermilk 1 teaspoon salt Add to above mixture and mix well. Bake in sheet pan 9x13 at 350?. Icing 1 stick butter 1 box powdered sugar 4 tablespoons cocoa 1 teaspoon vanilla Melt butter and cocoa. Add sugar and vanilla. Add milk as needed. Pour over cake while hot. PEANUT CHEESE SOUFFLE 1/2 cup butter 3/4 cup flour 3/4 teaspoon salt 1/8 teaspoon onion salt 1 1/2 cups milk 1 1/2 cups (6 oz.) grated cheddar cheese 1/4 teaspoon Worcestershire sauce 1 cup finely chopped peanuts 6 egg yolks 6 egg whites 1 tablespoon parmesan cheese In a saucepan, melt butter and add flour, salt, onion salt; blend well. Gradually add milk and cook over low heat until thick and very stiff, while stirring constantly. Blend in cheddar cheese, stirring until melted. Add Worcestershire sauce and peanuts. Blend in egg yolks one at a time. Remove saucepan from heat. Beat egg whites until stiff, but not dry. Fold egg whites gently but thoroughly into mixture in saucepan. Butter a 9x9x2 inch casserole and sprinkle with parmesan cheese. Evenly spoon cheese mixture into casserole. Bake in a preheated 350? oven for 25 minutes. Remove from oven. Let stand 2 minutes. Cut into rec tangles and serve immediately. Serve with packaged creamed vegetables such as broccoli or those made from scratch. Makes approximately 6 main dish serv ings. SQUASH CASSEROLE 2 cups cooked squash, mashed 2/3 cup chopped onion 2/3 cup crumbled bacon or chop ped ham 1 cup chopped roasted peanuts, peanut oil or bacon drippings 2 tablespoons flour 1 1/4 cup milk 1/2 teaspoon salt 1/4 teaspoon black pepper To the squash, add the onion, bacon and peanuts. Stir part of the milk into the flour until it is dissolved. Add this and rest of milk to the squash mixture. Season with salt and pepper. Pour into a casserole. Dribble a little peanut oil or bacon drippings on top. Bake in a preheated 350? oven for about 20 minutes. Serves 6-8. Looking for an easy way to measure shortening? If you want a half cup, fill a full measuring cup half with water. Then add dabs of shortening. When the water reaches the one-cup mark, you have added half a cup of shorten ing.
