Roll this in a small jar of chipped beef (chipped into very small bits). Line a mixing boxl with plastic wrap and put the ball in. Refrigerate or may be frozen. Makes one large or two small balls. Lemon Bread (Dot Jones) 3 teaspoons shortening 3 teaspoons butter 1 V* cups sugar rind of 1 lemon 2 eggs 1 Vi cups flour 1 teaspoon baking powder Vi cup milk juice of 1 lemon Cream shortening and butter. Add 1 cup of sugar and lemon rind. Add sifted dry ingredients, eggs and milk. Bake at 350 degrees for 2S-30 minutes or until toothpick comes out clean. You can make 2 small loaves or 1 large loaf. Mix remaining V* cup sugar and lemon juice and pour over top of loaves. Let cool 5 minutes before removing from pan. Bran Muffins (?Catherine Ferguson) 1 Vi cups all bran 1 egg 1 V* cups flour Vi teaspoon salt 1 V* cups milk V* cup shortening 3 teaspoons baking powder Vi cup sugar-raisins Combine bran and milk. Let stand 2 minutes. Beat in egg and shortening. Stir in mixture of flour, baking powder, salt (sugar) raisins. Spoon into greased muffin pan. Bake at 400 degrees about 20 minutes in greased 12 muffin pan. Georgia's Georgeous Peanut Butter Gems Melt in the top of the double boiler 2 cups semisweet chocolate pieces. While it is melting, mix together: 1 cup crunchy peanut butter 1 Vi cups graham cracker crumbs 1 cup (2 sticks) butter, melted V* pound confectioners' sugar, preferably sifted Pat this into a 13 x 0 inch pan, spread the melted chocolate on top, then chill it and cut it into small squares. These freeze well; and to make sure others don't polish them off before you can, store them in a large empty shortening can that still wears its original label. Hamburger Pie With Potato Crust 12-oz. pkg. frozen shredded potatoes Vi teaspoon salt (optional) 1 egg, slightly beaten 1/8 teaspoon pepper Cut a "Y" in package of potatoes. Cook in microwave on HIGH for 5 minutes. In small bowl, mix egg, salt and pepper and cooked potatoes. Spread on bot tom and sides of 9-inch pie plate. Cook uncovered for 5 minutes: I lb. ground beef Vz teaspoon salt Vi teaspoon basil 1 egg slightly beaten 1 onion chopped 1/8 teaspoon thyme V* cup tomatoes, cut in pieces '/j cup cottage cheese In 1 Vi quart casserole, microwave beef and onion on HIGH 6 minutes. Stir salt, thyme and basil into meat; spoon mixture into crust. Cover meat mixture with tomatoes. Mix together egg and cottage cheese and pour over meat mixture. Sprinkle with paprika. Cook covered with wax paper 15 minutes at 70 percent power. Turn V* turn every 5 minutes. Conventional Oven In structions: Combine shredded potatoes, thawed and drained, egg, salt and pepper. Spread on bottom and sides of pie plate. Brown meat and onions; 'stir salt, thyme and basil into meat; spoon mixture into crust. Cover meat mixture with tomatoes. Mix together egg and cottage cheese and pour mixture. Sprinkle with paprika. Bake at 350 ?F for one hour. Schedule Tuesday, January 31, 1984, 10:00 a.m. - Extension Homemakers Of ficer Training.
