(Continued from Page II) those holiday homemades can spell disaster. So if you enjoy holiday baking, help others enjoy the results by thinking thin as you choose your recipes. For example, plain sugar cookie cutouts are lower in calories than cookies loaded with nuts, chocolate chips and candied fruit. To decorate, sprinkle the sugar cookies lightly with colored sugar before baking. Or, use an egg yolk icing. Avoid using a thick confec tioners sugar frosting. You can also cut the number of calories in bar cookies and candies in half by cutting them half size. As a bonus, you'll get twice as many servings. Do the same with slices of fruit cake, nutbreads and cake. So enjoy your holiday baking. But remember to consider those who want to cut calories. Here are some of the recipes shared by Hoke County residents. Red Top Salad (Mrs. Aline W right) 1 pkg. lemon gelatin 10 marshmallows Vi pint cream whipped 1 cup chopped pecans 1 pkg. cherry gelatin 1 small can crushed pineapple Vi lb. grated cheese V* cup salad dressing Dissolve lemon gelatin in 1 -Vi cups hot water, add marshmallows and let melt. When cool, add other ingredients (except cherry gelatin). Let this congeal. Then dissolve cherry gelatin in 2 cups hot water. When cold pour over other salad. Mother's Cookies (Mrs. Aline W right) 3'/: cups sifted all purpose Hour 1 teaspoon baking soda V* teaspoon salt 1 tablespoon cinnamon 1 cup shortening (butter) 1 cup white sugar 1 cup brown sugar 2 eggs 1 cup chopped nuts Sift flour, soda and salt together first; cream butter, add sugar. Beat eggs and add to mixture, add nuts and flour. Divide dough in parts and roll on wax paper until diameter of silver dollar. Wrap in wax paper, (each roll separate) and put in refrigerator for at least 12 hours. Slice and bake on well greased baking sheet at 350 1 for 7-10 minutes. Makes about 8 dozen cookies. Humdingers (Mrs. A lint M right) I stick butter . '/< cup sugar Melt; Add: 1 cup chopped dates 1 cup chopped nuts Mix well and cook 7 minutes. Remove from stove and add l^i cups or 2 cups rice krispies. Mix and when cool make into Angers and sprinkle with powdered sugar. Brown Sugar Pound Cake (Mrs. T.B. Lester) 3 sticks butter V* cup white sugar 3 cups plain flour V4 teaspoon salt 1 teaspoon vanilla 1 lb. light brown sugar 4 eggs 1 cup milk Vi teaspoon baking ponder Cream butter, add sugar and beat. Add eggs one at a time. Add flour, salt and baking powder; alternately with milk. Add vanilla. Pour into tube pan. greased and floured. Bake at 350" for 1 hour. Brown Sugar Pound Cake Caramel Icing fXtrs. T.B. Lester) 2 cups brown sugar (packed) '/: cup butter 5 tablespoons milk Mix w?U. Boil foe 2 minutes. After it comes to a boil remove from stove and add V* teaspoon baking powder and V* teaspoon vanilla. Beat until smooth. Spread on cake. Many Flavored faun* Cafe* (Wn. Xlargem Johi ?s?m> 2 sticks butler cup vegetable shortening 3 cups sugar 5 eggs well beaten 3 cups flout l: teaspoon baking powder I cup milk I teaspoon coconut extract I teaspoon rum I teaspoon lemon 1 teaspoon vanilla I teaspoon almond Cream butter, shortening and sugar (best if creamed about 10 minutes). Add eggs. Combine bak ing powder and flour; add to creamed mixture alternately with milk. Stir in flavorings. Pour into greased and floured 10** tube pan. Bake at 325 0 for I hour and 30 minutes. Glaze (Optional) 1 cup sugar I teaspoon vanilla 1 teaspoon lemon I teaspoon almond I teaspoon coconut 1 : cup water I teaspoon butter Combine in heavy saucepan. Bring to a boil, stir until sugar is dissolved. Pour over cake jusi out of oven. Let sit in pan until cake is cool. Friendship Tea Mix 1 \trs . Spoon into an 8" pie plate. Bake at 350? for 15 minutes or serve cold without baking. Serve with crackers. Broccott-OMese Squares ( Mrs. Margaret Johnson) 3 tablespoons butter or margarine, softened 3 large eggs I cup all-purpose flour 1 teaspoon salt 2 tablespoons finely-chopped onion Seasoned salt 2 pkgs. (I0-o/. each) frozen chop ped broccoli I cup milk I teaspoon baking powder 1 lb. mild cheddar cheese, coarsely, shredded (4 cups) ; Grease 9 \ 13-inch baking dish; with the butter. Steam broccoli un-; til partially cooked, about 3; minutes. Cool and press dry. Beat; eggs and milk until frothy.* Thoroughly mix flour, baking powder and salt: stir into egg mix ture. mixing well. Fold in broccoli,' cheese and onion; spoon into bak-^ ing dish, spreading evenly.! Sprinkle with seasoned salt.
