As a young girl, I remember Easter as a time of hunting for eggs at community Easter egg hunts and buy ing a favorite new dress to wear to church on Easter Sunday. Perhaps my favorite part of Easter as a child was searching for my own Easter basket hidden somewhere in my home. My mother always took time to specially prepare a basket for every memberof the family with small tokens of love, jelly beans, chocolate and more. My dad got to do the best part -hide the baskets. Let me tell you, my dad found some of the best places. Today, I’m married and out on my own, but Easter time always brings back those memories 1 treasure so dearly. Now as a wife, I think more about the practical side of what to do with all those Easter eggs after having the fun of dying them. Below are several stuffed egg reci pes that are great to do with leftover hard-boiled eggs. The directions with each recipe are basically the same: Slice large hard-boiled eggs in half lengthwise and remove yolks. Mash yolks and add all the remaining ingre dients of the recipe except the top pings and garnishings. Stir yolk mix ture until smooth and then carefully spoon into egg whites. Sprinkle with topping and garnish with if desired.
