The new test for fat will pr bably not require more than Ave dollars worth of apparatus beside that already on hand in most creameries. Th same centrifuge Is used as in the Babcock test and the same acid. The rpecial appartus consists of senaratory funnel of glass with capillary stem. The separatory funnel is essentially a cylinder holding a brut two and a half ounces construct) d with a glass stopper at the top and a stop cock in a capillary tube at the bottom. A special socket is necessary to hold the funnel while in the centrifuge. The principal steps involved in the tent are; The washing out of the 'salt from a weighed charge of tho butter with hot water, the oissolving out of the curd with hot dilute sulphuric dcid, the s paration of the acid solution fjrom the fat and the weighing of the .fat. When the salt teat is to bo made the wash water is collected and the salt in it is determined by the usual cheiiical reaction. I The time consumed in making the con test is pot much if any more than is re- auired to make a careful testi for factory cream by the Babcock method. A little more time is required if the percentage of salt is wanted. The new test haa been thoroughly tried out in comparison with the official laboratory methods and is quite in ac cord with them in results. Y ou Hill ER VACATION.
