Today's column comes in
the form of a commentary,
which 1 will be presenting
periodically, strictly infor
mative and constructive to
our general feelings of
certain situations which
occur almost daily.
Recently I read an article
in "Gottlieb's Bottom Line,"
a monthly foodservice news
letter, which really stirred up
a whole lot of something in
me. Something that every
retail business person faces,
regardless of products sold.
Maybe a little more preva
lent in the restaurant
business, as I have heard it ,
all of my 30 years in pro
fessional cooking.
The old cliche, "The cus- ?
tomer is always right." Who
says the customer is always
right? To me, it has always i
been said by that certain
person who normally (
wouldn't take odds on the i
rising of the sun the next <
day, but will still use that '
policy as if it were a great 1
truth handed down by the ;
prophets. Think about this 1
statement for a minute, and ,
think about it from the .
employee's point of view. \
First, how can the cus
tomer always be right? No- ;
body is always right. Every- I
body, including customers,
make mistakes. Anybody '
who makes mistakes can't ,
always be right. ,
Second, if the customer is 1
always right, does that mean |
that the employee is always ,
wrong? We hardly think so. <
because if our employee is '
always wrong, why did he or (
she get hired? And, what ,
happens when our always f
wrong employee is a *
customer, and is always
right? Isn't there a contra- c
diction there somewhere? \
Don't you think it's long J
past the time when that old
cliche was sent to its final e
resting place? 1
Let's stop using outdated
and simplistic solutions to j
everyday problems. When a I
manager tells the employee
that the customer is always ?
right, some degree of credi- i
bility has been lost. The s
employee is never going to e
be so naive that he or she will '
swallow that line whole. If c
the employee believes the 4
manager is trying to "con" 1
him in this matter, perhaps J
the old con is working in (
other things, too.
If the manager is setfng j
up conditions under which t
the employee is alw ays going >
to be the loser, then the f
employee will stop playing.
Who needs to lose all the
time? Change that old, un- f
true truism to "The customer b
may not always be right; p
that's just the way we like to
be treated when we're a F
customer." Anybody can live b
with that - and that is "The
Bottom Line!" C
