PEAS AND CHEDDAR CHEESE STUFFED TOMATOES
Combine peas, cheese, eggs, celery, onion and plmientos in a
bowl. In a small bowl, blend together mayonnaise, curry powder,
salt and pepper. Toss with pea mixture, cover and refrigerate
overnight. Just before serving, core each tomato and partially
cut each from the top Into eighths without rutting through the
bottom skin. Fill each tomato with chilled pea mixture. Place
on individual lettuce leaves and top with bacon bits. Serves 4.
