Springtime is. Asparagus- Time Dutch Asparagus Salad . . . spring treat. By Cecily Brownstone Associated Press Food Editor For your family's first asparagus treat of the season, serve this de licious vegetable in a main-course salad. Here's one with a savory Dutch-style dressing, using bacon, vinegar, and sugar. With hot bot tered eloverleaf rolls, a hearty des sert and tea or coffee, this makes a most satisfying lunch or supper There are two schools of thought on cleaning asparagus. One of them recommends washing the vegetable thoroughly and cooking as i^ The other recommends us ing a razorlike vegetable parer to remove the scales and thin outer covering on the bottom part of the stalk ? starting just below the tip. Break or cut off each stalk of asparagus as far down as it snaps easily. A deep skillet with a dome shaped cover that fits tightly is perfect for cooking the whole stalks. Lay them flat in the pan. rover with an inch of boiling salt td water, and boil gently just un til tender ? 10 to 20 minutes. When the stalks can be pierced easily with a fork they're ready. Use kitchen tongs, if you have them, to remove the asparagus from the cooking water; hold the middle of the stalks with the iongs and lift carefully so as not to breflk the delicate tips. Asparagus may also be cut into one-inch lengths and cooked. In this case they'll need only 12 Jo 15 minutes of gentle boiling. Here are some good ways of serving asparagus after it's cooked. 1. Brown fine dry bread crumbs in melted butter or margarine and sprinkle over the asparagus just before serving. 2. Melt butter on top of ihe range or in a moderate oven, heat ing it just until it turns a golden brown; pour over the stalks. 3. Pour a cheese sauce over the asparagus, top with crisp bacon and sliced, hard-cooked eggs and serve as a luncheon or supper dish. 4. For a fine salad chill the stalks and arrange them on ro niainc leaves. Dress with a tangy French dressing or with a combina tion of mayonnaise, sour cream, and paprika. Illount Vernon BRAND $2?? 'j pound bacon (cut into tiny squares), 3 or 4 tablespoons wine vinegar, 1 teaspoon sugar, salt arid freshly ground pepper (to taste), iceberg lettuce, 2 hard cooked eggs (sliced), 2 green 1 onions. The Nwtonal Wildlife Federation re- s ports that it thrives from New En*- 1 land west to the Dakotas and ?nith t to Texas and Louisiana. It is at its best in dry, open fields, but it afco grows along thiekets and in thin woodlandn. Where there is not too much mois ture and shade, the Calico aster stands a foot or more in height. Here and there are a few which grow to be five feet tall. With many straggling branches, the Calico aster is a bushy plant. The main stem is smooth, while the ! branches are covered with down. The long, lance-shaped leaves are slightly rough. Toward the end of the summer, the plant wears its small blossoms.
