Easy to make with lime-flavored gelatin far the holiday feast.

Put green groceries on your
market list for St. Patrick's Day,
March 17. Is the family cele
brating at suppertime? Then start
with green split pea soup and tiny
buttered croutons. Go on to a
boneslesn smoked pork shoulder
butt or half-ham; accompany the
meat with chutney ? just for a
different touch. Serve parsley po
tatoes, too, and a green vegetable
such as creamed spinach or broc
coli. Tossed greens will make a
crisp and crunchy salad course.
Then bring on the crowning glory
? a molded dessert, as green as
lime-flavored gelatin will make it.
This dessert is a little different
because coconut, as well as dates
and oranges, go into it. The coco
nut gives it good flavor and inter
esting texture. But one tip: be
sure to chop the coconut in short
lengths, as the recipe directs, be
fore adding it to the gelatin. This
way the dessert will be easier to
cut into portions than if you leave
the coconut in long shreds. Here's
the recipe.
Line Coconut Fruit Mold
Ingredients: 2 packages lime
flavored gelatin, 2 cups very hot
water, I cup cold water, I cup or
ange juice, 2 oranges, 20 pitted
dates, 1H cups shredded coco
nut, cream, toasted coconut.
Method: Add gelatin to very hot
water and stir until dissolved. Stir
in cold water and orange juice.
Chill until slightly thickened.
Meanwhile peel oranges, removing
white membrane; dice. Slice dates.
Chop coconut Into short lengths.
Fold oranges, dates and coconut in
to slightly thickened gelatin. Turn
into shamrock mold or 8 by 8 by
2-inch pan; chill until firm. Un
mold. Whip cream and spread over
toy of gelatin dessert; sprinkle
with toasted coconut. Makes 10 to
12 servings.
N#te: To toast coconut; spread
thin in shallow baking pan. Place
in moderate (350F) oven; stir coco
nut often so it will toast evenly; re
move' from oven when it is a del
icate brown.
If friends are expected in the af
ternoon or evening on St. Patrick's
Day, here are snack suggestions.
Sandwich rolls, filled with water
cress or canned drained green as
paragus will make good-tasting and
attractive offering. Butter the
bread well and spread it with may
onnaise before rolling around the
filing.
Any small fry or teen-agers
among the guests? Then make

Use your favorite nigar-cookie
recipe, rolling the dough very thin;
cut into shamrock shapes with a
floured cutter and bake as usual.
Spread half the cooled cookies with
frosting tinted green and top with
tSe remaining cookies.
If layer cake is planned, you can
make it up from a white or yel
low cake mix. Put the layers to
gether with a pineapple. filling and
frost with cream thilf s tinted pale
green, whipped and sweetened.
