E ven T emperature Makes Frozen Foods Better By MARTHA BARNETT I Home Agent Each homemaker should try to make the best use possible of her freezer through maintaining cor rect temperatures at all times. There is no evidence that a tem perature below zero degree F. will justify the cost of maintaining such a temperature. Zero degree is the accepted proper storage tempera ture for frozen foods. There is evidence that a storage temperature higher than zero re sults in food not as good as other wise. North Carolina freezer - locker , plants have recording thermome ters on lobby walls that show the temperature inside their storage rooms. Some home freezers have thermometers inside, others do not. Low temperature thermometers are available to be put into the freezer. Storage temperature needs to be kept steady ? changes of tempera ture cause a gradual but definite drying of food. The moisture de posits itself Inside of the package and does not return to the food. If the packaging material is poor, the moisture goes through it in the form of vapor and deposits as frost on the inside of the freezer or locker, adding to the defrosting job. Putting warm food or too much chilled unfrozen food Into a- home freezer at one Utile may play havoc with temperature. Read your freez er book and follow the manufac turer's instructions on where and how to plaee packages of food in the freezer to freeze It. When food freezes too slowly, loas of quality (or even spoilage) results. When transferring frozen food, protect it from partly thawing by picking In corrugated carton with crumpled newspapers on top and bottom. Put this carton in a slight ly larger one. The layer of air be tween cartons acta as insulation.
