Horn* P?mon?tro*ion N?w? , Figs Are Ripe ; Time To Make Preserves! By FLOY G. GARNER Home Agent "As the watermelons lie ripen ing in the sun, the figs upon the bushes are ripening one by one." Figs are in their prime in Car teret County at this time and many of you have asked for preserving information. I realize that many people in Carteret County insist that they prefer figs preserved with the peeling left on. However, I'd like to encourage you to try at least one "batch" this season following the directions I'm going to give you today. Be honest with your comparison and I'll say no more. Fig Preserves No. 1. Gather figs when just ripe (they must not be soft or cracked). Peel carefully, trying not to cut too near tne seea. Use one pound of sugar and the juice of Vi lem on to each pound of fruit. Place sugar in preserving ket tle with enough waier 10 Keep ii Hoy G. Garner from sticking. Stir occasionally until it begins to boil. Add lemon juice. This will prevent crystals from forming. Add part of the figs and let them boil until clear and transparent. Remove to a platter, which should be placed in the sun if possible. Add more of the figs to the boil ing syrup until all are used. When all figs are removed, boil syrup down until as thick as honey. Add the figs which have been sunning or standing and boil two minutes. Set aside until next morning. Re heat to boiling point. Pack hot. Process filled jars for 10 minutes at simmering point. Two Girls Give Parties At Beach Club This Week Two parties were given at the Coral Bay Club by Duke Univer sity students this week. Miss Carol Caldwell of Durham entertained fifteen guests at a din ner party Monday. Swimming in the pool was also enjoyed. Miss Mary Nicholson of Kinston and Morehead City was hostess at a luncheon and swim party yes terday morning at the ciub. Miss Nicholson is a senior at Duke. No. 2. Cover six quarts figi ( 14 inch stem on each) with about ? quarts boiling water and let stand IS minutes, drain and rinse figs In clear, cold water. Prepare syrup (4 pounds sugar with 3 quarts water) and boil hard 10 minutes, skim, then slowly drop figs into it, a few at a time so as not to cool syrup. Cook rapidly until figs are transparent. Lift out and place them in shallow pans, boil syrup down until thick, pour over figs and let stand until morning. Re heat to boiling point. Then pack into clean sterilized jars, adjust closure, and process in water bath for 10 minutes at simmering tem perature (180" F.) Packing: Arrange figs in rows In the jars with stem up, pouring a little syrup as each row is placed. Use paddle to remove bubbles. Figs which are peeled by hand should be labeled "Skinless Figs." They bring a better price in the market than those that have the skins removed by scalding in soda water. Remember to set aside a jar or so for the County Fair which will be coming soon. We have room for 3-4 more to attend crafts workshop Aug. 19, 20, 21, at Manteo. If you are in terested, please call 2-4011 today.
