It should not mean that less food is canned but only that changes be made in the way it is canned. If you have no sugar, can any way, then the sugar may be added from your ration | next winter. The sugar 'shortage will give everyone, an opportunity to experi-! ment with less sugar and try sugar substitutes when they are available. When Canning With Sugar 1. If you have sugar to; use, use less of it than in I previous year*. That is, a I light syrup in place of the medium syrup you might have used. Strawberries are good with one-half cup of sugar per quart of berries. Some fruits are sweet and require less sugar than this. I a. If you have honey of your ow r n, use it. 1 b. Honey adds a flavor of its own and may be used, with good results for up to one-half the sugar. c. A few grains of salt some of the tart •ness from fruits and brings out the. fruit flavor. Not more than one-eighth to one-fourth teaspoon per ( quail should be used. Heat she fully ripe fruit in a double! boiler or in an ordinary pan! set in hot water, just long ! enough to draw out the! juice. Strain.
