Sweet potato flakes, mechanical apple, cabbage grape, tomato and cucumber har- ■ ■ Sweet potato ; flakes —a majoi contribution. from the research laboratories at North Carolina State. According to impartial bakers and 7 other potential users flaked sweet. potato products ar< equal to those made from frest or canned potatoes. Briefly, sweet potato flakes are prepared in much the sam< manner as for other purposes They are peeled, sliced 'and cook ed. After cooking they are pulp ed and rolled out in dry sheets with the aid of a ' drum drier, Moisture is reduced to about 2 per cent. When dry the sheets are broken into desired particle size and may be. packaged in cans or multiwalled laminated bags. ■ And here is the pay-off. To have a delicious mix for pie,' souffle, etc., just add three <>r four parts of hot water 0 r milk to one part of flakes. Through aid to e dependent children, money pay-| n merits are made possilble for 1 needy ' dependent children who have been., deprived of parental I j ‘ care and support because of the death, physical or mental incapa r city or continued absence from : the home of one or both parents, . whether natural, step or adop ; tive. Let’s take a look at three fami : lies in a small rural County which have been strengthened, and children who have been kept in school, through this important program. * ' Take Peggy, for example. Her father is physically incapacitated and cannot hold regular employ ment. The family is being helped by a money payment from the aid to dependent children pro gram. The caseworker fr o m the county department of public welfare has had many conferen ces with Peggy’s teacher this year because of Peggy’s s high. I. Q- and the desire to see that she had appropriate help. Peggy is Capable of doing much more ad vanced work than her classmates and her teacher has given her additional work because of this. This family is doing everything | they can to help themselves and ! lake great pride* in Peggy and j her. accomplishments. . i In another family the father 1 suffered a severe concussion as s I the result of an automobile acci - ——-■—mu————. i ... . ... dent. There axe four children in the family and it was necessary for them to recejye an aid to de pendent children grant—in order, to maintain even a minimum level of living. The elder son h a g now graduated fr o m high school and is employed. The older dau ghter, Mary, is an outstanding student in high school and has a flair for writing and editing, a talent which is being recpgnized by her classmates and teachers, f for she is on the staff of the e school publication. She has re - ceived numerous honors in school, - is a member of the schol stic ; honor society, and hopes to go to - college. The public welfare agency will help her toward her goal. i In still another family where r the father is disabled and has 1 r.ot regained his health suffi , 'ciently to support his family, 1 there are five children. All are r normal except one little girl, who is retarded, and also has required special medical attention. The Parents were hesitant about send ing her to school, but the case- Iworkt r in the county department of public welfare requested a psychological evaluation. The ) parents were cooperative. As a 1 result of this examination, it was. j suggested that the child be in- I eluded in a special education class ’for trainable children. She has ! progressed well in her speech and other areas of learning. Now the family is proud of her ac-j eomplishments. Without the help of aid to dependent children, these same families might have produced such dramatic and exciting news storks as juvenile delinquents, suicides, thefts, or other serious violations.
