Bailey. ** Mr. and Mrs. John Eic horn of Atlanta, Ga. spent several days last week with Mrs. Eichom’s parents, Mr. and Mrs. Charles Cooper, of Burnsville. Mrs. Hough Huff is an assistant helper with the Bloodmobile operation and not an l.p.n. as stated in last weeks Journal. * Meeting, Supper Slated American Legion Earl Horton Post and Auxiliary will have regular meeting and covered dish supper at the Community Build ing, Tuesday, June 28, at 7:00 p.m. A special program will be presented by the girls attend- - ing the Auxiliary-sponsored Girls State this year. SOUTHERN FRIED CHICKEN/CREAM GRAVY I 1 2'A-3 lb. broiler-fryer chic- I ken, riit up ' I Salt I Pepper I 2 cups all purpose flour I 1 tsp. cayenne pepper rl egg, beaten I l A cup milk I Vi cup (1 stick) butter Season chicken pieces I with desired amount of salt l and pepper. Combine flour I and cayenne pepper, mixing I well. Mix together beaten egg I and milk. Dip chicken pieces I in egg mixture then dredge in ■ flour mixture. Melt butter in I large skillet; add chicken ■ pieces. Cover and cook over ■ medium heat approximately ■3O minutes or until golden ■brown. Turn occasionally. CREAM GRAVY ■4 Tbsp. drippings ■4 Tbsp. all-purpose flour ■3 cups hot milk ■l/8 tsp. salt ■l/8 tsp. pepper Remove drippings from Akillet in which chicken was ■Tied, leaving 4 T. Over ■nedium heat, stir in flour Hintil browned. Gradually add Biot milk. Cook, stirring Bonstantly until i thickened. Add salt and pepper. Serve Bot. A August Wedding is planned. Rhonda Diane Haney, 13, of Rt. 5 was taken to Yancey Hospital with injuries to her foot. Hughes of the brush Creek Community of Green Mountain will celebrate their golden wedding anniversary Sunday, June 26. Friends, relatives and students are invited to attend the reception at the Methodlat Church Fellowship Hall between the hours of 2 and 4 p.m. Natives of Yancey County, Mr. and Mrs. Hughes are retired school teachers. They have three daughters, Mrs. Ouida Bass of Belmont, Mrs. Edna Leone of Newport News, Va., and Mrs. Mary Margaret Hanelson of Gastonia. They have six grandchildren. BLUE RIBBON POTATOSALAD 5 cups chopped peeled cooked potatoes 1 cup chopped celery Vi cup chopped green pepper Vi cup chopped sweet pickle IVi cup dairy sour cream 2 Tbsp. white wine 1 Tbsp. grated onion 1 Tbsp. salt V* tsp. pepper Radish fans curly endive Toss together potatoes, celery, green pepper and sweet pickle. Combine sour cream, vinegar, onion, salt and pepper, Stir sour cream mixture into potato mixture. Mix until * evenly coated. Cover and chill; to serve, garnish with radish fans'and endive, if desired. LEMON TRIFLE 2 tsp. grated lemon peel Vi cup fresh lemon juice lVi cups sugar Vi cup butter 3 eggs, slightly beaten 1 cup dairy sour cream 1 pt. strawberries 1 pound cake, cut in 18 slices V* inch thick 2 Tbsp.toasted sliced almonds Combine lemon peel and juice, sugar and butter; cook over low heat, stirring occa sionally until butter is melted and sugar is dissolved. Remove from heat. Blend a small amount of mixture into eggs; return all to sauce pan. Cook over med. heat, stirring constantly until mixture thick ens slightly (Do not boil). Cool-stir in sour cream. Place 6 slices of cake in a IVi qt. oblong casserole, cutting sli ces to cover bottom of dish. Top with half of sliced strawberries and Tcup lemon '-sauceJlepeat. For top layer, arrange remaining 6 slices cake in dish; top with remaining sauce. Sprinkle almonds over all. Slice re served strawberries to make fans and garnish top. Pate and Leonard B. Laws were united in marriage on Sunday June 19th. Joan is the daughter of Mr. Clarence E. Pate and Iris A. Pate of Burnsville. Leonard is the son so Mrs. Ethel Laws also of Burnsville. The wedding took place at the home of the groom where he and the bride will reside.
