Carolyn’s sister Cathy Allen is spending the summer with them. |w\ g From Tim Yancey Extension Homemakers food news & cues I BY DONNA McLAIN Extension Homemaker This summer, try Cheese Soup and a salad for lunch or dinner...or a shake on a hot day... CHEESE SOUP Yield 12 servings V* cup (Vi stick) butter 1 cup chopped onion 1 cup chopped celery 1 cup shredded carrots Vi cup all purpose flour l‘/j tblsp. instant chicken bouillon lVi tsp. salt V* tsp. paprika 4 cups water 4 cups milk 6 cups (1 Vi lb) shredded cheese Melt butter in heavy sauce pan; add onions, celery and carrots and saute until tender. Stir in flour, chicken bouillon, salt and paprika. Remove from heat; gradually stir in water and heat to boiling; stirring occasionally. Boil 1 minute. Add milk and heat to simmering point. Remove from heat and stir in cheese - -until melted. Remove to low heat to finish melting cheese, I if necessary. (Do not boil) Serve topped with chopped green pepper, pimiento strips and toasted silvered almonds | or cooked crumbled bacon. SHAKE UP THESE SHAKES 12 ounce glass I 2 tblsp. pineapple with syrup I 2 tblsp frozen orange juice I concentrated, thawed I 1 small scoop (Vi cup) I softened vanilla ice cream. Gradually add Vi cup of chilled gingerale stirring , slightly. Top with another scoop of vanilla ice cream. If necessary, till the glass with more gingerale. • Pour Vi cup chilled black cherry soda into a shaker for each serving, add one large scoop (Vi cup) of softened chocolate ice cream, and shake until well blended. Garnish with whipped cream and a maraschino cherry. It’s a good taste combination. • For 4 servings [8 os. each] Combine one sliced banana i with 1 tblsp. grated orange peel, Vi cup orange juice, V* cups honey and a dash of salt. As all other bloodmobile visits during the past year, it was sponsored by the Yancey County Unit, Civil Air Radio Patrol. We feel that this is a good time to pay tribute to all the work they have been doing. Before each successful visit there are many hours of volunteer work being done. Posters must be put up, donors recruited and a lot of publicity work. Perhaps to the genera] public it looks rather matter-of-fact that the blood mobile visits are successful, but a lot of work must be done before each visit is a success. The volunteers, under the direction of Mrs. Phyllis Bailey and the Youth group under the direction of Mrs. Shaw all are doing a marve lous job. The Red Cross thanks and commends each and every one for their part in this necessary work. The quota set for the Mayland Chapter for the of nutmeg. STRAWBERRY RHUBARB PIE 6-8 servings Pie Shed 1 cup all purpose flour V* tsp. salt 3 tblsp. each butter and lard 3 to 4 tblsp. milk Filling 2 cups sliced rhubarb (V* inch pieces) 1 cup sugar Vi cup all purpose flour 2 tblsp. water 2 tblsp. butter 2 pints whole strawberries (washed and stemmed) whipped cream For pie »heO-combine flour and salt. Cut in butter and lard until mixture resembles coarse crumbs. Sprinkle in milk, 1 tblsp at a time, mixing until flour is moistened. Shape into a ball. Roll out dough on a lightly floured surface to an 11 inch circle. Line a 9 inch pie plate with dough. Trim edges, fold under and flute. Prick sides and bottom of dough with a fork. Bake in a preheated 425 degree oven 12-15 minutes or until lightly browned. Cool on Young Appointed To NC Council William Ira (Bill) Young of Morganton has been ap pointed by Gov. James Hunt, Jr. to serve on the North Carolina Human Relations Council. Young will serve on the council at the pleasure of the governor. Young, a native of Burns ville, has been a faculty member at Western Piedmont Community College for nine years. He was recently involved as co-chairman of the Jim Hunt for Governor campaign in Burke County. Yancey County has contributed 354, which is just 46 short of the number requested from our county. More than enough people presented themselves as do nors to have surpassed the 400 mark, but were turned down for medical reasons. At the same time, lots of the Yancey Countians have dona ted at their place of employ ment, which is very com mendable, but they are counted in the county they donated in. So, Congratulations Yan cey County, to each donor, to each volunteer, to the women of the churches who manned the canteens, to Mrs. Shaw and her Health Occupations class, to the chairman of the volunteers, to the record keeper, Mrs. Shephard, and any others who contributed to a successful yeas. It was a marvelous success! The Civil Air Radio Patrol thanks you for helping them to make this a year of which we can all be proud! a wire rack. For fllling-Combine rhubarb, sugar, flour and water. Bring to a boil. Boil, stirring constantly 1 minute or until thickened. Add butter and stir until melted. Remove from heat. Fold strawberries into rhubarb mixture-cool to luke warm. Spread filling into cooled pie shell. Chill several hours or overnight. To serve top with whipped cream if desired. BLUEBERRY YUM YUM PIE Crust 3 cups graham crax crumbs lVa sticks margarine Cream together and pack half of mixture in bottom of oblong cake pan. 2nd layer Cream large pkg. cream cheese with V* cup sugar, 2 pkg. Dream Whip, 1 cup milk; Whip and add 1 tsp. vanilla. Put Vi this over graham cracker crumbs. 3rd layer Use 1 or 2 cans blueberry pie filling over Dream Whip-put remainder of Dream Whip over blueberry filling.
