(ScoutPhom) ovmg eporter By JUSTIN* BOZIXR Clay County Home Economics Agent We're making Corn bread In Clay County this month. This may not sound like news, at first thought, but let's get the facts. This month our J unlor 4-H Club girls are participating In the "Enriched Cornmeal Muffin Activity*" Each girl learns to make muffins, at home for the family, using enriched cornmeal and a standard recipe. On club meeting day she brings muffins to school n> be Judged against the standard score sheet. Then we have a county contest. The county winner Is selected on the basis of ex cellent muffins and the best record book on her activity. Mary Evelyn Spurr, of Elf, was our county and district winner and competed In the Sate Contest last year. We hope Clay County has the dis trict winner again this year. I have asked our Home Demonstration Club members to use the same recipe, and bring one muffin to club meet ing. They are learning to 'Make Good Cornbread Better* In this month's demonstration. (Some of the women haven't brought muffins, so 1 have decided their muffins are so bad they are ashamed of them, or so good that the family eats them ail upl) We have aeveral purposes In teaching the art of Making Cornbread. First, some of the women will be serving as Foods Leaders for Community 4-H Club*, and they will want to feel competent In advising the girls or judging their muf fins. Second, many of our families ett some form of corn me si product dally. We think everyone should use only "enriched" corameal. In some communities we find many families using home grown corn which la milled locally and Is not enriched. As delicious as It Is, It Is not adequate In the B vitamins and minerals which are added by enrichment. It was this lack of B vitamins, and lack of "niacin" in particular, which caused the disease. Pellagra, In many Southerns a few years Kt. Today, the wide use of iched ceareals and flours has all but eliminated pellagra. But In a few cases, where families still eat a lot of corafaread and grits which are not enriched, there are borderline symptoms that hasp some of our folks from enjoying the bast of good health. They may atgfOr from loss of I WOODWORKING PROJECT - Mrs. Billy Walls of Murphy Is show here putting the I K>uciaee as a walnut fireside bench for her home.
