Ever let your imagination run wild when you're preparing a salad?
I did, and I wound up "off the deep end." But in the process, I came
up with a couple of creations that seem just right for party times
or an informal getrtogether on the terrace or patio. The first one
requires just a wee bit more effort than the second, but I think
you?and your family and guests?will say they're both worth
the time spent in preparing them.
PARADISE FRUIT PLATTER SALAD
1 can (1 lb. 14 oz.) Bartlett pear 1 red app!e
halves 1 avocado
2 cups (1 lb.) cottage cheese 2 bunches grapes
3 slices pineapple 1 egg white, slightly beaten
M cup blueberries Granulated sugar
Drain pear halves. Arrange crisp greens on large platter. Pile cot
tage cheese in center of platter and surround with pineapple slices,
cut in half. Space pear halves around cottage cheese and fill centers
with blueberries. Put wedges of uupeeled apple and peeled avocado
between pear halves, break grapes in small clusters. Dip in beaten
egg white. Sprinkle with sugar. Distribute frosted grapes around
platter. Serve with favorite fruit dressing. Makes 8 servings.
FROZEN FRUIT CHSE&S SALAD
2 refrigerator trays 1 cut diced orange
2 cups small curd cottage 1 cup chopped, pitted, cooked
cheese, sieved prunes
1 cup dairy sour cream 1 large banana, sliced
3 tablespoons confectioners Yt cup sliced maraschino cherries
sugar Yi cup chopped blanched almonds
K teaspoon salt Salad greens
1 cup drained pineapple tidbits Creamy Pink Dressing*
Blend cottage cheese lightly with sour cream, sugar, salt, pineapple,
orange, prunes, banana, cherries and almonds. Pour into refrigerator
trays, which have been rinsed in cold water. Freeze> until firm.
Allow to stand a few minutes before cutting into serving pieces.
Place on salad greens. Serve with Creamy Pink Dressing* and
garnish with a stemmed cherry and orange section.
