Lamb and Noodle Stew (Serves six) Two tablespoons butter or margarine, 1% pounds lamb riblets, 1 medium-sized onion, chopped: 114 cups stock or bouillon, 114 teaspoons salt, V* teaspoon pepper, 114 cups diced yellow turnips, one 9 ounce package frozen French style green beans, 114 table spoons all-purpose flour, 1 tablespoon salt, 3 quarts boil ing water, 8 ounces medium egg noodles (about 4 cups). ^ Melt butter or margarine. BT DOROTHY MADDOX Add lamb and onion and cook over low heat until lamb is browned on all sides. Add stock or bouillon, 1% teaspoons salt and, pepper. Cover and cook over low heat 20 minutes. Add turnips and cook, covered, 15 minutes. Add green beans and cook 5 minutes, or until tender. Remove lamb and vegetables. Add flour to stock mikture; blend. . J Cook -over low heat, stirring constantly, until thickened. Add lamb and vegetables to thickened stock mixture. Mean while, add 1 tablespoon salt to rapidly boiling water. Grad ually add ndodles so that water, continues to boiL Cook uncov ered, stirring occasionally, un til tender. Drain in colander. Combine noodles and stew; mix lightly: Lamb Riblet Bake • (Serves six) One and , one-half - pounds lamb riblets, 2 medium-sized potatoes, thinly sliced; 1 large onion, thinly sliced; 3 medium sized tomatoes, sliced; salt and pepper. , Arrange alternate layers of lamb, potatoes, onion and tomatoes in shallow baking dish. Sprinkle each layer with salt and pepper. Cover and bake in moderate oven (350 degrees F.) 1% hoius, or until lamb is tender.
