Bine cheese-mushroom pie Is * springtime m treat that will be enjoyed by all. —■&.}. .——:—s ue Cheese-Mushroom Pie % "by BOROTHY MADDOX \ DANISH BLUE CHEESE AND MUSHROOM PIE 2 tablespoons butter cap Danish bine cheese , crumbled package quick-froxen broccoli, cooked until tender pound fresh mushrooms (about 20) v 2 tablespoons minced onion % cup milk Salt, pepper, paprika to taste % cup melted butter or salad oil (to brush tops of mushrooms) Wash mushrooms, remove stems, chop stems finely. Saute in butter and dnion until tender, but not browned. Season to taste and cool slightly.' Blend in milk and cheese; mix well. 'Pour mixture over broccoli. Stand mushrooms, crowns, up, in. casserole with broccoli. Brush with butter. Bake in moderate oven (330 degrees F.) 10 to 15 minutes, or until mush rooms are tender. Serve with cheese pimento sauce. ' CHEESE PIMENTO SAUCE \ - 2 tablespoons butter 1 cup millr 2 tablespoons flour Salt and pepper to taste Make cream sauce of butter, flour, milk and add 1 cup Danish blue cheese, crumbled. Cook mixture over hot, but not boiling water until cheese melts (about 1 minute). Add % cup chopped pimento. V F'ROM THE Question .box: “Someone told me I could control the peach tree borer with. DDT. I tried1 this but it did not work.” There are two species of borers attacking ^ peaqh trees in North Carolina, both of which can be controlled with DDT. The lesser peach tree^ borer usually feeds on the limbs, yr high up on the trunk, while' the peach tree borer usually causes damage near the base of the tree. ■- ' The timing of sprays is the key, to successful control. It is standard practice for commercial growers to spray the trunks and limbs of trees July 1, August 1 and September 1 with DDT. Parathion and Thiodan may ajso be used. ' The only remedy now is to re move the .peach tree borers from the base of the tree. (This meth od is not practiced for the lesser borer on the limbs.) Remove the soil from the base of the tree, and the gummy exudate. Locate the tunnels, cutting as little as possible, and kill the borers by pushing a March 27th Meet on Soybean Cultivation To Be Held in Kinston Interest in soybean production has been gaining in recent years. It appears the interest will con tinue in 1962. Some-of the reasons being cited for.this increased interest is that soybeans are easily mechanized, fertilizer .costs are lower than for some other crops and the demand for soybeans has, about kept up with the increased production. How long this will continue is unknown. Because of the possibilities that soybeans offer to this section, a meeting will be held on Tuesday, March 27, at 7 ;30 at the Agricul tural Building in Kinston. Add l^cups water and % teaspoon soda; bring to a boil; simmer, covered 20 minutes, stirring occasionally. Chop peeled fruit; discard seeds. Add pulp and juice to undrained cooked rind. Simmer, covered, 10 minutes'longer. Measure 3 cups Into a very large saucepan. Add sugar to fruit In saucepan and mix well. Place over high heat, bring to a full rolling boll; boil hard 1 minute, stirring con stantly. Remove from heat and at once stir In Certo. Skim foam with metal spoon. Stir and skim by turns for 7 minutes to pre vent floating fruit. Ladle into glasses. Cover with % Inch hot paraffin. Makes 7 medium glasses. flexible wire into the tunnel.
