Mr. Powell, Miss McCrary, and Mrs. Stinson, the reservation clerk, confer and consider the number of registra tions and the number served dur mg the past years in trying to decide how many places to plan. Then Mr. Powell consults his ink bottle and he usually comes up with an accurate number to be served at each meal. Friday evening dinner and Sun day dinner are the largest meals in the number of people served. Miss McCrary assigns bus-boys and waitresses to positions of four tables of ten places at each table, and these assignments are rotated each week. These young people set and place food on the tables for the number of people expected. “Stand-by” tables are set but no food placed on them and are used in emerg encies. Miss McCrary jokingly tells Mr. Powell that he can open a can of food in emergencies but she can’t manufacture a waitress or bus boy. Mrs. Powell is the former Velma Beaty from Charleston, S. C. She is assisted in her duties by Joel Morgan, Emporia, Va. Mrs. Powell determines for each meal the cost of each item on the menu, the food cost per person, the food and supply cost per per son, and the number fed. Each week she reports the food cost, the cost of supplies and labor, miscellaneous costs, and the re capitualation of the amounts of food and food cost per person with the amount of income.
