% lb. minced veal, C. minced
pork, 2Vz C. milk, 2 eggs, % C.
bread crumbs, 2 T. finely chopped
onions, 4 T. butter, salt and pepper.
Put meat 3 times through grind

bread crumbs and let soak until

Mix the green beans and peas
in well-buttered casserole, add sea
soning, dot with butter, add mush
room soup and top with onion
rings. Cover and bake in oven,
450 degrees, for one hour.
SEAFOOD AND MUSHROOM
CASSEROLE

1 large c-an tuna fish
2 cans crabmeat
1 can sliced mushrooms
1 can cream mushroom soup
1 44 cups toasted bread crumbs
4b pound butter
44 cup sherry
Marinate tuna and crabmeat for
1 or 2 hours in sherry. Saute
bread crumbs in butter. Saute
mushrooms in butter. Mix all in
gredients together and add mush
room soup. Place in casserole.
Cover with layer of bread crumbs.
Cook slowly in 325 degree oven un
til brown, about 1 hour. Will serve
six or eight.

cloth. If necessary, add enough

Add savory infusion to: 1 cup

portion. 314 C. sugar, 4 drops
green coloring.
Bring to a quick boil, then add
’2 bottle Certo, and roll boil '2
minute only. Remove from burn
er to skim before pouring into
jelly glasses.
Makes 4 small glasses.

orange rind (or *4 C. orange juice.)
Cook until thoroughly mixed and
thickened. When ready to bake
remove pastry balls one at a time.
Roll in circle between sheets of
waxed paper. Cut each circle in 8
sections or wedges and put about
tsp. filling (which has been
cooled) on each wedge. Roll up and
curve into crescent shape.
Bake at 400 degrees for 15-20
minutes. Roll in confectioner’s
sugar. If desired, cinnamon may
be lightly sprinkled on each wedge
before rolling.
LEMON PIE

1 cup sugar, 1 cup water (rind
and juice of 1 lemon) to make one
cup. 2 tbsp. cornstarch, 2 egg yolks,
1 tbsp. butter.
Mix sugar and com starch, stir
in egg yolks, add water and butter,
cook until thick. Pour into a baked
pie shell and top with meringue (2
egg whites). Brown meringue in
slow oven.
FUDGE PECAN PIE

2 squares unsweetened chocolate
(2 oz.) 2 tbsp. butter. 3 eggs, Vz
cup sugar, % cup dark Karo sy
rup. 1 cup pecan halves.
Heat oven to 375 degrees (quick
moderate). Melt together over hot
water chocolate, butter. Beat to
gether eggs, sugar, chocolate mix
ture, syrup. Mix in pecan halves.
Pour into 9 in. uncooked pastry
lined pan. (Use your favorite pas
try receipe). Bake pie 40 or 50 min.
just until set. Garnish with whip
ped cream when cool.
RITZ CRACKER PIE

Crush 18 Ritz crackers with -"4
cup sugar, add half the sugar to
the crackers. 3 egg whites whipped
into other half of sugar. Fold in
dry ingredients—1 cup nuts (chop)
'2 C. when chopped), 1 teaspoon
vanilla. Bake in greased pyrex pie
plate, :>50 degrees for 20 min. Chill
well and serve with whipped cream.

ricer, 2 C. flour, 1 tsp. soda, 1 C.
pecans, salt, 1 tsp. Bake slowly

1 package frozen raspberries: 1
envelope unflavored gelatin; 2/3
cup cold water; 1 cup whipping
cream; 8 to 10 brown-edge vanilla
wafer cookies or 1 pkg. lady fing
ers (halved and halved again).
Heat raspberries to boiling in
small saucepan over low heat; re
move from heat.
Soften gelatin in cold water; dis
solve in hot berry mixture; chill
just until beginning to thicken.
Beat cream until stiff; fold into
gelatin mixture; fill a 4-cud mold
three-quarters full; place cookies
around rim of bowl of bowl (or
lady fingers), dipping part way
into gelatin mixture to hold in
place: carefully spoon in remain
ing gelatin; chill until firm, pre
ferably overnight.
To unmold, loosen around edge
with spatula: dip bowl quickly in
to hot water; shake gently; set
serving plate on top; turn upside
down; carefully lift off bowl; gar
nish with whipped cream and ring
of fresh raspberries, when in sea
son. if you like.
ORANGE POl ROVER CAKE

1 cup shortening, 1 % cups su
gar, 3 medium eggs, cups sift
ed all-purpose flour, 2 teaspoon
making powder, 2 teaspoon baking
soda, 1 teaspoon salt, 1 cup butter
milk, 2 teaspoon vanilla, 1 cup
chopped pecans, 1 cup chopped
dates, grated peel of 2 oranges.
Cream shortening, add sugar
gradually and cream well. Add
e£tgs, one at a time, beating well
after each addition. Sift flour,
baking powder, soda, and salt to
gether. Add to creamed mixture
alternately with buttermilk. Fold
in vanilla, pecans, dates and grat
ed peel. Pour into a 9x3 inch well

at 375 degrees for 1 hour. Remove
cake from oven and allow to cool
in pan for 10 minutes. Pour sauce
over cake. Let stand for several
hours or overnight so the sauce
will penetrate and flavors blend.
Pour-over Sauce
Squeeze juice and pulp from 3
oranges and add 1cups sugar.
Bring to a boil and simmer until
orange pulp becomes transparent.
Pour warm syrup over cake 10
minutes after it comes out of oven.
APPLE SAUCE CAKE i

2 sticks margerine. 2 cups white
sugar, 3 eggs. 2 cups applesauce,
3 cups flour, 2 teaspoons cocoa. 2
teaspoons cloves. 2 teaspoons cinna
mon, 2 teaspoons allspice, 2 tea
spoons soda, 2 cups raisins, 1 cup
nuts, 2 teaspoons vanilla extract,
2 teaspoons lemon extract. Cream
butter, sugar and add eggs. Sift
dry ingredients—add alternately '
with applesauce. Add raisins, nuts,
vanilla and lemon. Bake in tube
pan at 325 degrees for approxi
mately one hour.
OATMEAL COOKIES

(melted), 2 eggs, 6 T. molasses, Is;
C. flour, 1 tsp. cinnamon, 1 tsp.
baking powder, 1 tsp. soda. >2 tsp.
salt, 2 C. rolled oats, "-2 C. chopped
nuts. 1 C. raisins or dates.
Mix sugar and melted shortening
together. Add beaten eggs and
molasses. Sift flour once before
measuring. Sift flour, cinnamon,
soda, baking powder and salt to
gether and add rolled oats, nuts and
fruit and mix.
Combine flour mixture with mo
lasses mixture and blend thor
oughly. Drop small teaspoonfuls a
little apart on greased cooky sheet
and bake. Time—15 min. Tem
perature, 350 degree (moderate
oven). Amount, more than 100
small cookies.

the lead, 38-37, and forged ahead,
