Thompson said this adage resulted from suggestions ad vanced by the Soil Testing Di vision of the North Carolina Department of Agriculture. The laboratory of the testing divi sion is encountering problems in getting wet soil samples ready to test. However, Mr. Thompson says, accuracy of sampling Is the first consideration. A good sample from any field must be collected from at least 15 20 different places in the field. Wet soil is almost im possible to mix, A good sample which is representative of the millions of pints of soil in the field can not be gotten from wet soil. ' ii If a soil sample must be col lected when the soli Is wet, spread the 15-20 cores or" sub samples" on a paper and allow them to dry without artificial heat. The barn or any other suitable place can be used to spread samples but make cer tain no fertilizers have ever been stored or absorbed on the surface on which the samples are spread. Mr. Thompson suggested other advantages to mailing dry samples to the Soil Testing laboratory. Turkey, of course, is easy, what with hash, a la king, chop suey, chow mein and curry. All are tasty, economical and a snap to make. But what about ham? Here's what about ham. An elegant dish we call HAM AND MUSHROOM SUPREME. ' 1 cup cooked ham strips H cup chopped onion 2 tbsp. butter 2 tap. flour 1 6 -ounce can sliced mushrooms, drained 1 cup sour cream Saute ham and onion in butter. Sprinkle with flour, add mushrooms and gradually stir in sour cream. Cook over low heat, stirring constantly, until mixture thickens. Pour over rice or noodles and garnish with parsley.
