CAUSES OF BROWNING
When corn turns brown
during the canning pro
J cess, it's usually because
the corn wu too young.
The high temperature
necessary for safe process
ing causes a carameliza
tkm of the sugar in the
corn. It may also be caused
by some mineral, such ai
iron, in the water used hi
| canning.
