Juanita Bailey instructs a last week at the Agriculture Extension Office, class in microwave cooking Extension news Juanita Bailey _ Some thirty-four county women recently attended a Microwave Workshop held at the County Office Building. Major emphasis during this workshop was focused on microwaving meats. Home Economics Extension Agent, Juanita T. Bailey stated that "microwaved meats cook in one third to one half the time it takes to cook them using your conventional range". Homenukers preparing meats in the microwave should realize that less tender cuts of meat such as chuck roasts need to be (1) cooked in liquid, 12) tightly covered and (3) cooked on low to medium power setting in order to be juicy and tender. Bailey also cautioned those at tending not to overcook meats. "Always cook your meats the minimum amount of time given in the recipe. Allow for standing time, then test for doneness. Workshop Favorite CABBAGE BOLLS ITALIAN STYLE Power Level: High (10) Time: 22-26 8 large cabbage leaves (from outer layers of cabbage) Vi c. water In 3-qt. casserole dish, place cab bage and water. Cover. Microwave at High for 7-9 minutes, or until leaves are pliable. Meat Mixture 1 lb. ground chuck beef legg 1 c. pkged., precooked ( minute) rice 3 T. chopped onion 1 1. salt While cabbage is cooking, mix together ground beef, egg, rice, onion and salt. Divide meat mixture into 8 equal portions. Return to 3-qt. casserole, placing rolls seam-side down. It is easier to form cabbage rolls if you shape the meat mixture into rolls about 3 inches long. Place each meat roll on the base of the cabbage leaf over the heavy vein. Fold the sides of the leaf over the meat and roll up. Secure the roll with a wooden pick if necessary. Sauce 2 8-oz. cans tomato sauce 1 T. sugar ~ 1 1. oregano Blend tomato sauce, sugar and oregano. Pour over cabbage rolls. Cover casserole. Microwave at High for 15 to 17 minutes, rotating dish turn and basting with sauce after 9 minutes. Yield: 8 cabbage rolls. Lane is one of the winners of the Bank of North Carolina's 1981 Incentive Program, it was announced recently by President and Chief Executive Officer, Charles F. Merrill. A native of Perquimans County, Ms. Lane won Second Place in the statewide promotion. The purpose of the Incentive Program was to in crease sales efforts and bring in new deposits, and was open to every tank employee. Ms. Lane joined BNC in 1977 and is a member of the -Jaycettes, the P:*T.A. and is a Band Booster. She has' one daughter. Sheri, age 14.
