Big cats caught locally Her* ia the dead of lummer, it'* hard not to be thinking ahead of fall. Some of the boys have already begun to turn the hounds loose on some of these cooler nights and In a couple of weeks we should begin to see the first of the waterfowl migration taking place. The early arrivals will be the blue winged teal and unless you live near aome water or a marsh, I doubt that you will even know the teal are passing through on their flight south to the gulf states and beyond. Our early waterfowl season here just does get us in on the stragglers in the migration but then it seems that when it comes to waterfowl in this area, we always seem to get our season "betwixt and between." Getting a little more seasonal now. the fishing here has not been as good as it was but it's still probably better 1 than anywhere else in the area. Good catches of white perch are being taken. The best fishing has got to be for catfish and there have been some really big cats taken lately. Down at the "S" bridge the fishing has been a little slow during the day but at night when it's good It's great with really nice catches of white perch being taken. The fishing down at the beach has been fair with decent catches of mullet being taken off the piers and in the surf with some spot mixed in. The good fishing can be had if you have a boat and know how to catch flounder. Oregon Inlet is full of flounder and the small boats have been filling the boxes with them. The trout fishing in the inlet has also picked up recently but if you don't fish the inlet regularly from a boat and don't know the waters, stay well west of the bridge or take someone that does know the inlet well because it can get bad in a hurry. That's about it for this week so we'll see you next week. American Legion team wins women's Softball league TENNIS TOURNAMENT - Closed county tournament. Register at the Rec. Dept. now through July 23. Tournament to be held on Saturday and Sunday. Men's groups 15 and under, 16-29, 30 and over. Women's groups IS and under, 16 and over. FISHING CONTEST - Register at the Rec. Dept. before July 20. Contest held Wednesday, July 21 from 9 a.m. until 12 noon at Missing Mill Park. All ages welcome. Awards to longest and heaviest caught in each age group. TEE-BALL ? On Tuesday, Larry's Drive-In defeated Ace Hardware 41 to S. GIRLS' SOFTBALL - On Monday, Woodland Dress Shop-Little Mint slipped past Farm Bureau Insurance 9 to 8 in extra innings. Kim Owens and Wanda Chappell were 2 for 3 for the winners and Mary Margaret White was 4 for 4 for the losers. On Wednesday, Farm Bureau beat Woodland Dress Shop-Little Mint 10 to 4. J. Perry was 2 for 2 for the winners, while the losers only got 3 hits. ADULT SOFTBALL - In the women's finals, American Legion beat Bank of NC 3 to 1. M. Leary was 3 for 3 for American Legion and Jo Thach was 2 for 3 for the Bank. At 7:30, the Outlaws forfeited to Albemarle Chemical. At 8:30 Bud weiser destroyed the Rangers 16 to 2. Elliott and Woodell were 2 for 2 for the winners. Matthews got the only hit for the Bangers. On Thursday, Palmerstown for feited to the Rangers. Then at 7:30 Albemarle Chemical defeated Bud weiser 4 to 1. Evans was 3 for 4 for Albemarle Chemical and Hunter 2 for 3 for Budweiser. FISH FRY ? Sponsored by Tri County Law Enforcement Association, Inc. Proceeds to go to the Perquimans County Rec. Dept. To be held on Saturday, July 31 from 4-8 p.m. at Missing Mill Park. Band members attend camp Members of the Perquimans County High School Band returned home last week from two band camps with many honors. At the Mid-Atlantic Band front camp in Ferrum College, Va., 31 students from the Marching Pirates attended. Perquimans students excelled with their majorettes receiving the most spirited team trophy. Those students .were Liu Stevenson, Gwendolyn Perry, Jana Privitt and Marisa Stevenson. During the exhibition at the end of camp Elizabeth Towe was a featured flag twirler. Students from N.C., Va., Tenn., Maryland, and Penn. high schools attended the camp. The band officers attended the "Spirit of Atlanta" Drum and Bugle Corps Leadership Camp at Erskine College in Due West, S C. Perquimans students received five out of eight trophies given out at the end of the camp. Best overall per cussion went to Dwayne Proctor, the Marching Pirates drum line captain. Best overall horn went to David Milan, brass captain (or Perquimans. The outstanding leadership award went to Eric Skinner, Perquimans junior drum major, and the best overall rifle twirler went to Ann Forbes, the Marching Pirates rifle captain. Ann was also awarded the camp "Spirit of Atlanta" award given to the most outstanding student of the camp. The students also participated in a squad marching competition and again Perquimans students were honored. Students in the winning squads were: 1st place- Dwayne Proctor, David Saunders and Chris Mansfield; 2nd place- Clay Wagner and David Milan; 3rd place- Shelia Perry, commanding officer; 4th place- Ann Forbes; and 7th place- Eric Skinner, commanding officer. Students from N.C., S.C., Tenn., Georgia, and Florida attended the camp. At the end of the week, the students performed with a top drum and bugle corp, "The Spirit of Atlanta." Canning without sugar or salt Canning without salt or sugar is perfectly safe. Salt is usually added for flavor and taste only, though it does help to preserve the color and texture in canned vegetables. However, it doesn't do anything to help prevent spoilage, says Dr. Nadine Tope, extension food con servation specialist, North Carolina State University. Sugar helps canned fruit hold its shape and adds color and flavor but also does nothing to prevent spoilage. If you want to can vegetables without salt, prepare the food ac cording to instructions in your favorite reliable recipe book. The processing time for canning vegetables without salt is the same as for vegetables with salt. Fruits can be canned successfully in water, in their own juice or in other extracted juice without added sugar. Prepare the fruit for canning, using either the raw or hot pack method. The hot pack method is preferred by extension specialists. Cover the fruit with hot juice or water leaving Vi inch headroom. If you want to add an artificial sweetener you'll get the best flavor by waiting and sweetening the fruit at serving time. Some sweeteners tend to get bitter when heated, Dr. Tope says. To help prevent darkening, you can add '/4 teaspoon crystalline ascorbic acid to each quart of light fruit .
