COMMUNITY Casserole ideas using your fa vorite summer garden vegeta bles Ai yellow squash and fucchini i \ t'.orurr In KiIiim foKmim ?tart to abound In your summer garden. 1 suggest you try these new casserole recipes. Each dish may be prepared early in the day and baked immediately before serving. 111 Hyiri. i 10-12 yellow squash salt and pepper sugar t green onions with tops chopped IVi T. chopped parsley IVi Urge onion chopped 1 green pepper chopped 1 C. grated Parmeson cheese 1 C. seasoned bread crumbs 1 T. Chicken stock base 1 T. sugar Dash white pepper Dash papriha Chopped chives Slice squash and cook in water seasoned with salt, papper, and sugar. Drain. Fry bacon and crumble. Saute remaining vegetables in bacon grease. Drain. Conbine bacon and vegetables to the squash. Mix. Add remaining ingredients but chives. Mix well. Turn into a buttered baking dish. Top with chives, additional bread crumbs and papriha. Bake 350 degree se until brown and bubbly on top, about 25-30 minutes. Serves eight. Salad featured by Extension Homemakers "Salads for All Courses" proved to be just that last Extension north Carolina AGRICULTURAL EXTENSION SERVICE ?v Poig* Undttwood Thursday night at the Tasting Tour sponsored by the Perquimans County Extension Honjemakers. From appetiser to desert, there was a salad to please. Ifrs. Mary Cowper, Home Economics Extension Agent from Gates County, was the guest speaker who gave helpful information on salads and salad ingredients. She demonstrated several salads including "Humpty Dumpty" Salad, a nice combination of hard cooked eggs and ham spread. This salad was a favorite as well as her cucumber salad. Hawaiian Chicken Salad prepared by Mrs. Eloise White and Mrs. Virginia Winslow received many favorable comments. The tasters were suprized that the pineapple tid bits, silvered almonds and pitted dates did not overpower the chicken but complimented the main course salad. All salads were a hit; but Mrs. Josephine Strogerg's and Mrs. Sally Knight's Strawberry Salad was different and tasty. This salad containing marshmellows and cottage cheese, made the perfect dessert or party salad. Other salad recipes include a delicious Orange Sour Cream Dip by Pearl Barber and Jean Humphlette; Copper Pennies by Mrs. Reba Hurdle and Mrs. Isetta Hollowell; Jellied Fruit Salad by Mrs. Emma Burke; and Carrot-Raisin-Pineapple Salad by Mrs. Ellie Mae Vickers and Mrs. Sarah White. The salads were especially appealing because of their cool, refreshing color, texture and flavor. Also, because the salads were very nutritious and attractive. Bethel and Burgess Extension Homemakers Association were hostess for the program. Those assisting were Mrs. Alvis Jordan who presided, Mrs. Anne White who presented the thought for the day, Mrs. Etheleen Davenport, Mrs. Eula Williams, Mrs. Isabel] Stallings, Mrs. Blanche Stallings and Mrs. Madora Pritchard. We especially thank all those who participated and attended. The evening was a delightful success. ( \4 )lb. each zucchini 1 T. minced onion 1 T. olive oil 1% C. chopped fresh mushrooms Vfr C. grated Parmeson cheese, divided Vtt. basil Salt k pepper to taste 4 Strips of bacon, halved Cut zucchini in half length wise-scoop out seed. Drop zucchini into boiling water. Cover and simmer eight minutes. Remove and drain upside down on rack. Saute onion i olive oil. When done, add mushrooms and cook until tender. Combine mushrooms, onions V* c. grated cheese, basil, salt and pepper. Mix gently. Spoon mixture into zucchini shells. Top with grated cheese and a strip of bacon. Bake 350 degreese for IS minutes or until bacon is browned. Serves eight. Drain. Make white sauce with butter, flour and milk. Season with salt and pepper. Remove from heat . and stir in cheese until melted. Arrange zucchini, artichoke, and- ' mushrooms in a 7" x 11" ' casserole. Pour cheese sauce - over vegetables. Sprinkle with cracker crumbs and Parmeson cheese.
