Community Calendar Benefit fish fry set The Perquimans Union School P.T.A. is sponsoring ? benefit fish fry on Saturday, August 10 from 4-7 p.m. at the school. E.I.C. to hold hearing The Economic Improvement Council Inc. will conduct a pub lic hearing at the Perquimans County Courthouse on Friday, August 9 at 10:00 a.m. The com munity is urged to attend. Rec. Dept.-Senior Center to sponsor trip The Perquimans County Rec reation Department and the Se nior Center are sponsoring a trip to Kenans ville, North Caro lina on Saturday, August 24 to see the performance of the out door drama "The Liberty Cart." The play regards the past 200 years of history in eastern North Carolina. Buses will depart from the Recreation Department at 3:00 p.m. and travle to Kinston where we will stop for dinner. After dinner the group will ta vel to Kenansville to the William R. Kenan memorial Amphi theatre where the play will be gin at 8:15 p.m. The play lasts approximately three hours. Buses should arrive back in Hertford around 2:00 a.m. The cost for the trip is $16 per person which includes transpor tation only. People 60 years of age and over are admitted into the play for free. The cost for those under 60 is $6 per person. Stuffed pork chops and cheesy bean casserole make a delightful meal Grill a stuffed pork chop and add the chacacy bean casserole for a delightful meal. 6Y FQKlA WOLVtRTON Staffed Park Chops Vt small onion, chopped 1 tablespoon butter V? cup chopped cooked ham Vfc cup fresh mushrooms V? teaspoon dried whole ore gano dash of pepper 2 (1-inch) thick pork chops 2 tablespoon butter Vi cup dry sherry Freeh parsley Freeh mushrooms Ssute oofan in one tablespoon butter until tender; remove from beat. Add ham, mush rooms, oregano and pepper; mix well and set aside. Make pockets in pork chops, cutting from the rib side just to the be ginning of fat edge of each chop. Stuff pockets of park chop with ham mixture. Brown pork chops in two ta blespoons butter over medium beat about five minutes on each side. Add sherry; cover, reduce heat, and simmer 45-50 minutes or until pork chops tender. Garnish with parsley and mush room slices. Serves two. Swiss Beans 6 cups French cut beans 2 tablespoons butter 1 tablespoons flour ^ teaspoon salt Vt teaspoon pepper 1 teaspoon sugar 3 tablespoons minced onion 1 cup sour cream pound Swiss cheese grated Parboil beans three miiwiten. Drain and arrange in a shallow casserole. Melt butter, stir in flour and cook, stirring for several min utes. Add seasonings and onion and stir over medium heat to blend. Stir in sour cream.
