Community Recipes for Labor day Rockingham speedway race results Your Labor Day plans most likely include a picnic or cookout with fam ily and friends. If you plan to Barbe cue chickens or pill chops, the fol lowing vegetables will be delicious accompaniments. Please use fresh potatoes, green beans and of course, tomatoes. Take the time to "French cut" the beans. Add a fruit cobbler and homemade ice-cream to finalize a tasty meal. CHEESY NEW POTATOES 12 medium-size new potatoes, un peeled and cut in cubes V4 cup butter or margarine, melted y? teaspoon pepper 1 cup fully cooked real bacon pieces 2 cups (8 ounces) sharp process American cheese y? cup chopped fresh parsley Cover potatoes with salted water, and bring to a boil; reduce heat, and cook about 15 minutes or until tender. Drain potatoes, and cool slightly. Stir in butter and pepper; toss lightly. Spoon half of potato mixture into a lightly greased, 3-quart casserole. Top with half each of bacon and cheese. Repeat layers. Bake at 350 degrees for 20 minutes or until bub bly. Garnish with parsley. Yield: 8 to 10 servings. GREEN BEANS AMANDINE 3 cups water Mi teaspoon salt 2 pounds fresh green beans, french cut H cup silvered almonds 3 tablespoons butter, melted 1 tablespoon lemon juice to teaspoon salt lemon twist (optional) Combine water and to teaspoon salt; bring to a boil. Add beans; re turn to a boil. Cover, reduce beat, and simmer 20 minutes; drain. Saute almonds in butter until golden. Reduce heat; stir in lemon juice and to teaspoon salt. Toss with beans. Garnish with a lemon twist, if desired. Yield: 8 servings. MARINATED TOMATOES 4 large tomatoes, sliced one-third cup olive oil to cup red wine vinegar 2 teaspoons parsley flakes 1 teaspoon chopped onion 1 teaspoon Italian seasoning I teaspoon salt to teaspoon sugar to teaspoon garlic salt to teaspoon coarsely ground pepper Arrange tomato slices in a shallow container. Combine remaining ingre dients; mix well, and pour over to matoes. Cover and marinate in re frigerator several hours or overnight. Yield: 8 servings. Union School Highlights Buses traveling the highways, bells ringing, voices chattering, children walking on the right side of the hall, teachers giving assignments, all brought the familiar signs of a new school year at Union to a great begin ning. Lockers have been assigned, books issued, and rules and regulations dis cussed. Copies of the student hand book have been given to each child. After the homeroom teachers have finished discussing the information within the booklet, it will be the child's responsibility to have the par ents read and sign the form at the end of the book indicating that they have read the book. This form will be filed in the office to be referred to in case any disciplinary action which may need to be taken. Students in grades 7 48 were intro duced to the new mini-course rota tion which includes the vocational subjects, art, music, computer edu cation, physical education, and fam ily life and health. Union's cafeteria is being remod eled and is tentatively scheduled to be operative in approximately three weeks. We appreciate the efforts of the cafeteria personnel at Central and Union Schools who are working to make the lunch hour as organized as possible. We also thank the parents for help ing us in the successful beginning of the 198647 school year. All households with disabled adults should authorize a representative to receive the food for them; however, this must be done prior to the distri bution by coining to the Department of Social Services for authorization. All other households must only pick up their own food for which their household is entitled. There will be no certification of authorized represen tives at the Distribution Site. Food stamp recipients will be auto matically eligible and will be mailed an application card which they must bring to the Ice Plant on the day of distribution. All other applicants may pick up an application blank at any one of the following locations: Department of Social Services, Health Department, Economic Im provement Council or Catholic Social Services. Applications will not be available at the Distribution Site. Ap plications may be obtained from the above locations on or after Septem ber 8, 1966. James, Jr., son of retired Army Sgt. 1st Class John T. James of Rural Route 2, Hertford, N.C., and Carolyn Z. James of 3100 Weaver Road, Hampton, Va., received prac tical work in military leadership at the U.S. Army ROTC advanced camp, Fort Bragg, N.C. The six-week camp, attended by cadets normally between their third and fourth year of college, includes instruction in communications, man agement and survival training. Successful completion of the ad vanced camp and graduation from college results in a commission as a second lieutenant in either the U.S. Army, Army Reserve or National Guard for the cadet. In addition to the championship points showdown in the Pro Stock and Alcohol Funny Car divisions and the rip-snorting confrontations of Pro Funny Cars, this production will fea ture a field of eight wild nitro-bura ing Top Fuel motorcycles capable of hitting the 300 m.p.h. mark; cometi tive runs between wheels landers "Hemi Under Glass" and "Night Raider" at speeds up to 100 m.p.h. and a battle of the sexes between Ag gie Hendricks and Tom Brown's Cali N.C., has completed a U.S. Air Force ROTC field training encampment at yandenberg Air Force Base, Califor nia. Field training, attended by cadets normally between their second and third year of college, gives an oppor tunity to evaluate each student's po tential as an officer, according to an Air Force spokesman. The summer's curriculum consists of orientations on jet aircraft, career opportunities, human relations edu cation and equal opportunity train ing. Physical fitness and survival training is also emphasized. The field training is four weeks, but cadets in the two-year ROTC pro gram receive an additional two weeks of instruction in the devel opment of air power and the contem porary Air Force. The Winston Series points championship showdown for the Pro Stock season title between Rickie, Darrell Alderman and Bob Glidden and the Alcohol Funny Car duel to the n / wire between Bunny Burkett and Greg Mom is all the incentive naeded far longtime drag racing follower* Following opening-round qualify ing for all classes except motorcycles on Friday from 10 a.m. until 5 p.m., Saturday's action begins at 9 a.m. and concludes at 10 p.m. The piptor cydes will precede qualifying rounds for the professional classes at 1,46 p.m., 4:45 p.m. and 7;45 p.m. $+jr day night's action includes the first, round of Alcohol Funny Car final eliminations with the wheelstanders and Jet cars serving as the climax. Racing will resume at 10 a.m. Sun day morning with sportsman classes, completing their preliminaries. Fi nal Eliminations begin at 12 noon with motorcycles preceding this Pro Stock and Pro Funny Car runoffs. Fisherman asked to keep look-out Coastal fishermen are asked to be on the lookout for tagged channel bass (also called red drum and puppy drum.) Biologists with the N.C. Division of Marine Fisheries recently tagged 200 in the Pamlico River. TTjey hope to catch and release red drum in other areas later this year. Since 1983, they have placed orange or yellow plastic tags in the dorsal area of the drum from 10 to 60 inches in length. A $2 reward is offered for the re turn of the tag. Biologists need the help of fisher men returning the tags to learn where the red drum migrate, bow fast they grown, and other details to provide information necessary for management decisions.
