Pineapple-Strawberry Bavarian. ; Developed in the test kitchens of Carnation Company, the dessert is made velvety smooth and light textured with whipped Carnation evaporated milk. Economical evaporated milk can be used in all of your cooking needs. It makes soups and sauces creamier and meat loaves juicier. And it whips to three times its volume for use in whipped salads and chiffon desserts. PINEAPPLE-STRAWBERRY BAVARIAN (Makes 6 to 8 servings) 1 envelope unfavored gelatine V* cup sugar Va leaspoon grated lemon peel Va teaspoon salt IV* cups unsweetehed pineapple juice 2 eggs, separated % cup (small can) undi luted velvetized evaporated milk 1 tablespoon lemon juice Strawberry-Pineapple Sauce* Mix together gelatine, *4 cup sugar, lemon peel and salt in top of double boiler. Stir in pineapple juice and slightly beaten egg yolks. Cook, stirring constantly, over boiling water until sugar and gelatine dissolve, about 5 minutes. Chill until slightly thickened. Meanwhile, chill velvetized evaporated milk in refrigerator tray until soft ice crystals form around edges (10 to 15 minutes). Whip until stiff (about 1 minute). Add lemon juice and whip very stiff about 2 minutes. Beat egg whites until soft peaks form; gradually add remaining Vt cup sugar, beating until stiff but not dry. Fold whipped evaporated milk and egg whites into egg yolk mixture. Turn into VA quart mold; chill until firm. Unmold. Garnish with strawberries, if desired, and serve with Strawberry-Pineapple Sauce*. ' I 'Strawberry-Pineapple Sauce: (Makes about 2% cups): Mix 1 can (13V4 ounces) crushed pineapple, undrained, 2 teaspoons cornstarch and dash cinnamon; cook, stirring con stantly until mixture boils 1 minute. Stir in % cup un sweetened pineapple juice; chill. Fold in lVt cups fresh strawberries, sliccd.
