Tuna Chowder Can Be a Cold Day Blessing BY DOROTHY MADDOX When the cold wind’s blow, then it’s time for a steaming pot of hearty tuna chowder. Here’s the recipe, plus an extra recipe for corn, tomato and tuna chowder. Hearty Tuna Chowder One-half cup butter or mar garine, 9A cup chopped onions, 1 cup chopped green pepper, 1 cup sliced celery, 1 cup sliced carrots, 2 medium-sized toma toes, diced; two 7-ounce cans tuna, drained; 2 teaspoons salt, % teaspoon pepper, 2 tea spoons dry mustard, 1 quart milk, % cup chopped parsley. V4 cup dry sherry or juice of half lemon. Melt butter or margarine; add onions, green pepper, celery, carrots and tomatoes. Cook until onions are tender, stirring occasionally. Break tuna into pieces. Add tuna, salt, pepper, mustard, milk and parsley to onion mixture. Cover and cook over low heat 30 minutes, stirring occasion ally. Add sherry or lemon juice and mix well. Garnish with additional parsley, as de sired. Serve with hot crusty bread and relishes. Corn and Tomato Tuna Chowder (Serves six) Two 7-ounce cans tuna, drained; V* cup butter or mar garine, 1 cup sliced onions, one 12-ounce can whole kernel corn, one 1-pound 13-ounce can tomatoes, 1 teaspoon dry mus tard, 1 teaspoon salt, V* tea spoon pepper, 1 quart milk Tuna chowder adds warmth to you and your spirits. Break tuna into pieces. Melt butter or margarine; add onions and cook until tender. Add corn, undrained tomatoes, mustard, salt, pepper and tuna. Cover and cook 30 minutes, stirring occasionally. Gradually add milk and heat to serving temperature over low heat, stirring constantly. Help-A-Home Project To Be Discussed The Junior Woman’s Club will hear a program of Christmas mu sic at their regular Monday night meeting at the Woman’s Club. Miemlbers of the women’s or ganization will also complete plans for their Help-A-Home pro ject at Christmas, following the program which is being arranged by Mrs. Bill Jonas, program chair man. Mrs. James Gibson and Mrs. Furman Wilson will be co-host esses for the evening. The Help-A-Home project, of which Mrs. Jonas is chairman, includes this committee: Mrs. John H. Gamble, Miss Jackie (Blanton, and Mrs. Bill Jonas. The club plans a project of pro viding Christmas Cheer to some needy family in the area by pro viding toys, clothing and food.
