Department of Atgriculture. The new cheese is made from skim milk and looks and tastes like a very mild Cheddar cheese, Ruby Uzzle, extension con- s u m e r marketing specialist. North Carolina State University, explains. It contains only 5 to 7 per cent butterfat, compai-ed with Cheddar’s 31 per cent fat. The new cheese is the first made from skim milk that has acceptable body, texture, and flavor fdr table use. It is rela tively soft and mellow and has a clean, mild flavor that results from the small amount of butter- fat added to the skim milk. It contains more moisture and more nonfat Jr.ilk solids, which means it contains more' protein, than does Cheddar, Persons who have counter in the future. tasted it, rate the low-fat cheese good to excellent in flavor. I The low-fat cheese has another advantage. It can :ce made in 21* ' hours and needs only one to : three month’s curing time.
