PICKLES
Pack me dlum
cucumbers Into clean
quart Jars. Into each put
one bud of garlic, H
teaspoon alum, 2 dill
heads, or about ^
teaspoon dill seeds, one
hot pepper, and one
grape leaf. Mix one
; quart vinegar with three
I quarts water and me
I cup salt. Bring to boll
- and pour over
cucumbers. Seal at
once. Let stand six
weeks to 2 months
' before using.
SPICED PUMPKIN
j 12 cups cubed (1 Inch)
I pared seeded pumpkin,
about SH pounds)
I 4H cups granulated
I sugar
i, 2 cups white vinegar
I 2 tablespoons whole
I allspice
4 2 tablespoons whole
cloves
Cover pumpkin with
water; co(d( about 10
minutes or until tender.
Drain. Combine sugar
and vinegar In large
kettle; heat to boiling.
Add spices tied in
cheesecloth bag; then
pumpkin. Simmer,
uncovered, SO minutes,
stirring occasionally.
Remove spice bag.
Continue simmering
while quickly packing
one hot sterilized Jar at
a time. Fill to within H
Inch of top. Make sure
vinegar solution covers
pumpkin. Seal each Jar.
at once. 4-B Pints.
TURN A DAY
PICKLES
2 quarts cucumbers,
2^ to 3 Inches long, 2
pounds, 12 ounces)
3 cups vinegar
3 tablespoons
prepared mustard
2-3 cups sugar
2 2-3 cups sugar
3 tap. salt
tsp. prepared
t horseradish
Wash cucumbers
thoroughly. Crisp 2 or 8
hours In Ice water. Pack
closely In quart Jars to 1
Inch from top. Blend
remaining Ingredients
and pour over
cucumbers. Remove air
bubbles with spatula or
knife and add more
liquid to come to within
hi inch of the top. Seal
loosely and let stand 24
hours. Then tighten seal
and turn Jar upside
down to shake up the
pickling solution.

Repeat tightening seal,
shaking etc, each day
