BEEF AND CABBAGE
4 slices bacon, finely
diced
1 large onion, finely
diced
1 teupoon salt
Pei^er to taste
1 teaspoon poultry
seasoning
1 egg, slightly beaten
H cup soft bread crumbs
3 pounds lean groimd
beef
1 head cabbage,
shredded
1 (lOH OB.) can beef
bouillon
Fry bacon until crisp;
add onion and saute until
onion is transparent but
not brown. Add salt,
pepper, poultry seuonlng,
egg, and bread crumbs to
beef. Mix onion and bacon.
Place a layer of shredded
cabbage hi a three quart
cuMrole dlah; top with a
layer of the meat mixture.
Continue alternating
layers, ending with cab
bage. Pour bouillon over
an. Cover and bake at 860
degrees for hours.
Remove cover during the
lut 16 minutes to brown
cabbage. Yield: six
servings.

^ CASSEROLE
4 cup diced cooked ham
1 (8 oz.) can cream-style
com
3 tablespoons shredded
Cheddar cheese
1 egg, beaten
H cup milk
H cup cracker crumbs
Mix all Ingredients
together. Place In a
greued qt. csMerole
dish and bake at 836
degrees for about 46
minutes or until firm.
Yield: two servings.
BAKED UVER
WITH APPLES
1 pound beef liver, sliced
3 medium apples,
chopped
1 medium onion,
chopped
1V4 teaspoons salt
H teaq>oon pepper
6 slices bacon, cut Into
pieces
14 cup chopped olives
M cup chopped plmlento
cup chopped onion
% cup chopped green
pepper
3 eggs beaten
1 teaspoon salt
Dash hot pepper wuce
1 cup cracker crumbs
Combine com, olives,
plmlento, onion and green
pepper with egga and

crumbs, mix thoroughly
and pour into a greawd
two quart baking dish.
Bake at 860 for 80 minutes.
Yield: eight servings.

1 pound squash
1 large onion, grated
1 ciq> shredded Cheddar

3 tablespoons butter or
margarine
1 CSS, beaten
Dash ground nutmeg
Sfdt Sind pepper to taste
V4 cup cracker crumbs
Paprika
Oook squash and onion In
a small amount of salted
water; drain. Add cheew,
cream, butter, egg, nut
meg, salt and pepper. Mix
well. Pour Into a buttered
casserole dish. Top with
cracker crumbs and
paprika. Bake at 860
degrees until mixture
bubbles and crumbs are
brown, about 36 minutes.
Yield: 4 to 6 Mrvlngs.
