The N.C. State Motor Club
has estimated that 17 persons
will die in North Carolina traffic
accidents over the Thanksgiving
holiday week-end.
Official observance of the holi-
day will be over a 102-hr. period
that lasts from 6 p.m. Wednes-
day, November 21 through mid-
night Sunday, November 25.
‘Last year during a similar period
12 deaths occurred.

CHICKEN SPECTACULAR
Can Freeze
34 cups cooked: chicken, cubed
1 6 oz. pkg. combination wild
and long grain rice, cooked by
directions.
1 can cream of celery soup
1 medium onion, chopped
1 medium jar pimiento, cut up
2 16 oz. cans French style green
beans, drained
1 cup mayonnaise
1 8 oz. can water chestnuts, slic-
ed
Salt and pepper to taste
Mix all above ingredients.
Pour into 3 quart lightly greased
casserole. Bake 350 degrees for
30 minutes.

CRAB & SHRIMP
CASSEROLE
Can do ahead
¥2 cup chopped green pepper
Y2 cup chopped onion
1 cup King crabmeat
V4 tsp. each, salt and pepper
Generous squeezing of lemon
1 cup chopped celery
1 cup shrimp, cooked
1 cup mayonnaise
1 tsp. worcestershire sauce
1 cup soft bread crumbs
1 Tbsp. margarine, melted
{ Combine all ingredients ex-
cept bread crumbs and
margarine. Pour into greased
1Y5 qt. casserole dish. Mix bread
crumbs with melted margarine
and sprinkle over casserole. Bake
at 350 degrees for 30 minutes.
Serves four.

DIFFERENT BAKED BEANS
Can Do Ahead
1 16 oz. can baby lima beans
1 16 oz. can kidney beans
1 16 oz. can pork and beans
1 16 oz. can green beans
1 large onion, chopped
Y4 cup brown sugar -
Y4 cup vinegar
¥% cup catsup
1 Tbsp. worcestershire sauce
2 Tbsp. bacon drippings, op-
‘tional
Drain all beans. Add other in-
gredients and mix well. Bake in
9x13 inch casserole for 1 hour at
350 degrees. Makes 10 servings.

BAKED EGGS
Can Do Ahead
2 dozen eggs :
2 tablespoons butter
1 can cream of mushroom soup
15 cup half and half
5» pound fresh mushrooms, slic-
ed and sauteed :
1 tsp. Worcestershire sauce
1 cup grated cheese
Salt and pepper to taste .
‘Scramble 1 dozen eggs in 1
tablespoon of butter, very soft.
Mix in half the other ingredients,
except cheese. Pour into a 2
quart buttered casserole. Top
with half the cheese. Repeat
with other half of ingredients
and top with remaining cheese.
Bake at 250 degrees for 20-30
.minutes. Turn heat up briefly
before serving to be sure it is well
set and very hot. 12 Servings.

HOT BROCCOLI DIP
Can Freeze
Y4 cup butter or margarine
1 large onion, finely chopped
2 10% oz. cans mushroom soup
3 rolls of garlic cheese
2 4-0z." cans
mushrooms, drained
chopped
3 10 oz. pkgs. frozen, chopped
broccoli
Melt butter and saute onions
until clear. Stir in soup, cheese
and mushrooms. Stir until
cheese melts and all is blended.
Add cooked broccoli, well drain-
. ed. Put mixture in a 2 qut. chaf-
ing dish. Serve hot with crackers.

Motor Club Predicts 17 Will Die In Thanksgiving Holiday Wrecks
“There are several reasons
why our prediction is higher
than last years death toll,” Dr.
_ John G.Frazier, III, president of
the statewide motor club said.
‘North Carolina traffic
fatalities continue on an upward
trend. Latest figures show an ap-
proximate 12% increase over
the same period last year”,
“Highway deaths and injuries
have, traditionally, been a fairly
good indicator of economic con-
ditions. As economic conditions
improve, highway deaths and in-
jury numbers increase”, Frazier
continued.
“Another very important fac-
tor contributing to the increase
in traffic deaths is higher driving
“More and more motorists are
allowing their driving speed to
creep steadily upward and fail to
abide by the 55-mph speed
limit”, Dr. Frazier stated.
“If you want to be in control
of your own fate on the
highway, slow down,” Frazier
advised. “Fast driving removes
control from your hands, mak-
vent collisions,” he concluded.
All motorists are also urged to
use their seat belts. It has been
estimated that between 400 and
600 lives could be saved in
North Carolina each year if
every motorist wore seat belts.
“Thanksgiving should be a

stated. “Make this a safe and
happy Thanksgiving by driving
carefully. Slow down, and wear
seat belts at all times,” he con-
cluded.
