While I thoroughly enjoyed researching these recipes, my waistline and the bathroom scales tell me it's time to lay off the bread. make a soft dough. Knead 5-10 minutes. Cover with plastic wrap and a towel, let rest 20 minutes. Divide and shape as desired (rolls, clover leaf rolls, or 2 loaves). Yield: 3 dozen. to freeze: Shape dough into 1-inch balls or cut in desired shape, and place on wax paper-lined baking sheet. Freeze. Place frozen dough into a plastic bag, and freeze up to 1 month. to bake: Lightly grease muffin pans. Remove desired amount of ‘dough from freezer, and place 3 balls in each muffin cup. Cover and let rise in a warm place, free from drafts, 1 hour or until doubled in bulk.
