But the Partons are finding the going is tough until people forget that a tragedy took place on the premises last year. y "We think it will take some time for people to forget what happened but we have the time," said Cecil Parton, who signed a long lease on the building five weeks ago. The former Army cook and hotel administrator for a number of well known hotel chains, is the chef and loves it. He plans the meals, buys the food and cooks mouth-watering country meals, including biscuits and sawmill gravy, apple cobbler, and meats cooked order with gar- den fresh vegetables and salads. He prepares his own recipe for pasta which is included on the daily 21- item salad bar. "We moved to Bessemer City to be close to Carolinas Medical Center where our oldest daughter was a patient. I wanted more qual- ity time with her and our family, so I quit traveling for hotel chains and put up roots in my own busi- ness," said Parton. ; A certified hotel administrator since 1988, Parton directed field operations for Econo Lodges of America, supervised inspectors and supervised operations of 300 plus motels, including Holiday Inns and others. A native of Asheville, Parton started short order cooking as a boy but cooked in Uncle Sam's Army from October 1966-68. Before he joined the service, he worked as a patrolman for a year with the Charlotte Police Department. After his discharge from the mil- itary, he started his career in foods with International House of Pancakes as district director over 17 restaurants and from there got into cooking in earnest. He was as- sistant manager of food and bever- ages for Hyatt Hotels of Atlanta and Knoxville for four years and owned a 140-seat family style restaurant, Capri Pancake House in Asheville three years. He was gen- eral manager of High Country Inn, Boone, for a year and of Holiday Inn, Shelby, for two years. Before joining Econo Lodges in 1984, he directed ABC Investments of Dalton, GA at six hotels in Georgia and the Carolinas. The girls have been attending St. Matthew's Pre- School. "We were married 12 years be- fore the birth of our first child and the main reason we waited so long to start a family was that my work required so much traveling," said Parton. Now, he says he doesn't re- gret giving up traveling for cook- ing and cleaning his own restaurant and, most importantly, being with his family. "I'm doing things the Lord's way and we're running Pa Paw's the same way," he said. “Mrs. Parton said their schedule gives them plenty of time to be at home with the girls every day after 5:30 p.m. Does Parton cook at home?
