The Kings Mountain Herald Pictured are members of the 3-year-old PreSchool Class at Resurrection Lutheran Church of which Layla and Abbie Harris are members. Good recipes from ‘Cooking for a Cure’ Ed. note - (The recipes in today’s cooking corner come from “Cooking for A Cure,” a new book published by Resurrection Lutheran School with proceeds bene- fiting the Juvenile Diabetes Research Foundation in honor of four-year-old Layla Harris, the pre-schools first student diagnosed with Juvenile Diabetes.) TACO SOUP JEAN HARRIS 2lbs. hamburger 1 onion, chopped 2 (15 oz.) cans pinto beans, with juice 2 cans stewed tomatoes 2 cans corn, with juice 1 pkg. taco seasoning 1 pkg. ranch dressing 3 T. picante sauce 1 cup water Brown meat and onion. Add to remaining ingredients. Simmer 2 hours. When serv- ing you can add sour cream and grated cheese and tor- tillas. Delicious. ' SLOPPY JOES : MARSHA BROWN 1 1b. ground beef 1/2 cup ketchup 1 (80z.) canned tomato soup 1 T. vinegar 1 tsp. salt 1/2 cup onion, chopped 1/8 tsp. pepper 1 1/2 tsp. Worcestershire sauce 1 T. sugar Brown meat and drain off fat; add onion. Then add remaining ingredients and simmer 30 minutes. Serve over hamburger buns. FORGOTTEN CHICKEN PEGGY MILLER 1 cup uncooked rice 1 can cream of celery soup 1 can cream of chicken soup 1 1/2 cups water chicken pieces to serve 6 people salt and pepper to taste 1/2pkg. dry onion soup mix Grease 9 x13 baking dish and place rice in the bottom. Combine cream soups and water. Pour half of the soup mixture over rice and let stand for a few minutes. Place chicken over rice. Add salt and pepper and remain- ing soup mixture. Top with dry onion soup. Cover with foil and bake at 350 degrees for 11/2 to 2 hours. Serves 6. LEMON JELLO POUND CAKE ASHLEY HARRIS 1 (18 1/4 oz.) pkg. yellow cake mix pudding in the mix) 1 (3 0z.) pg. lemon gelatin 1 tsp. lemon flavoring 3/4 cup vegetable oil 4 eggs Grease and flour a 10 inch tube cake pan. Preheat oven to 350 degrees. Add dry gela- * tin to dry cake mix and blend well. Add 3/4 cup of the water, the lemon flavoring, vegetable oil. Add one egg at a time and blend well after each addition. Beat batter about 4 minutes on medium speed of mixer. Pour batter into a greased 10 inch tube cake pan; bake at 350 degrees for 45 minutes or until a toothpick inserted in the cake comes out clean. Allow cake to cool in pan about 15 minutes before removing. APPLE BETTY AMANDA TACKETT 6 med. apples. 1/2 cup sliced butter 3/4 cup flour 1/4 tsp. nutmeg 1/ 2 tsp. cinnamon Slice about 6 medium apples in bottom of 8x8 dish with 1/2 cup sliced butter. Cream sugar and butter and put on top of apples. Mix flour, nut- meg, cinnamon. Put mixture on top. Bake at 350 degrees about 45 minutes. MOM'’s' PINEAPPLE PIES SHIRLEY BRUTKO 2 graham cracker crusts 9 oz. Cool Whip 8 1/4 oz. crushed, drained pineapple 1 can Eagle Brand milk 1/2 cup pecans 1/3 cup lemon juice Fold Cool Whip, pineapple and eagle Brand milk togeth- er in a bowl. Be careful not to over mix. Add nuts and lemon juice last. Pour into pie shells and refrigerate for 2 hours makes one to eat and one to share. TEXAS GRANDMAMA’'S SPAGHETTI SAUCE JEAN HARRIS 1 Ib. round round 1 small onion, chopped 1 small green pepper, chopped salt and pepper 1 Tablespoon A-I sauce 1 T. Worcestershire sauce 1 (14 oz.) can tomato sauce 1 can tomato soup 3/4 soup can water Brown meat, onion and pep- per together in sauce pan In a large pot add meat mixture to other ingredients and sim- mer on low for 2 hours. This is a very unique flavor and kids love it. June 15, 2006 North Elementary School recently honored four employees that are retiring after many years of dedicated service in education. Left to right, Connie Savell, who has 31 years in education with 30 of them at North Elementary in third grade. She spent a year in England as a Fulbright teacher at the First Primary School; Jane Talbert, Media Specialist with 30 years in education, including 29 years at North; Marilyn Williams, 33 years in education as a teacher assistant; and Susan Goforth, 30 years in education with 27 of those years teach- ing kindergarten at North. Davidson Alumni to note anniversary The Davidson Alumni Association will celebrate its 28th anniversary June 18 at 3 p-m. at Mt. Zion Missionary Baptist Church Family Life Center, 220 N. Watterson Street, Kings Mountain. Guest speaker will be Jimmy Herndon. Music will be rendered by Robert Bennix and singers. The public is invited to attend.
