' > I / ( 1 l*a);e4A KINGS MOUNTAIN MIRROR Thursday, January 19,1974 From The Kitchen Of Henry Neisler Acf/vify Agenda — Oni Hout 2 tbsps. butter. ■/s cup white wine. 1 cup cream sauce. ■/s cup cooked mushrooms, sliced in half. 16 medium sized boiled shrimp. >A cup sour cream. 1 tbsp. chopped parsley. Pinch of thyme. Saute shallots in butter. Add wine and blend in cream sauce. Add mushrooms and shrimp and blend in sour cream. Add parsley and (From page 3A) thyme. Serve over rice oF use ~3oz. package creamed cheese, to stuff crepes. Crabmeat can be substituted for the shrimp. Sufficient for two servings over rice. SCRAMBLED EGGS WITH VERMOUTH 6 eggs. Va cup cream. 'A cup Vermouth or any other white table wine. ■A tsp. salt. Few grains pepper. 2 tbsps. butter. Beat eggs lightly. Add cream, wine salt and pepper. Melt butter in skillet, chafing dish or double boiler. When hot pour in the egg mixture. Stir occasionally until eggs are almost firm, still very moist. Stir in the cheese and serve without further cooking. BLE.NDER HOLLANDAISE SAUCE 1 stick butter. 3 egg yolks. 2 tsps. lemon juice. ■A tsp. salt. Few grains of cayenne pep per. In a saucepan, heat the butter until it begins to bubble. Put egg yolks, lemon juice, salt and cayenne in the con tainer of a blender, cover, turn blender on and immediately off. Put blender on high, remove lid and gradually pour the hot butter into the mix ture. Turn off the blender. Makes about 1 cup. If sauce needs reheating, set container in a pan of hot water and beat constantly with a whisk until warm and fluffy. BLENDER BERNAISE SAUCE 2 tbsps. white wine. 1 tbsp. tarragon vinegar. 2 tsps. chopped shallots. 2 tsp. chopped fresh tarragon (or 1 tsp. dried) 'a tsp. pepper. Three fourths cup Holla ndaise sauce. Cook the mixture over high heat until almost all the liquid has evaporated. Pour the mixture into three fourths of a cup of Hollandaise sauce in the container of a blender.
