It is velvety smooth. because it is made with Velvetized evapo rated milk. Use evaporated milk for creaming cof fee, too. You will find it a very versatile product and a boon to your cooking. saucy“orange puffs (Makes 8 puffs' 1 cup fine dry bread crumbs 1 tablespoon grated orange Va cup undiluted Carnation rind Evaporated Milk V* cup orange juice 3 egg yolks e B6 whites V 2 cup sugar Soak bo ad crumbs in Carnation Evaporated Milk. Set aside. Beat yolks until thick and lemon colored. Add orange rind, and juice. Stir into milk mixture. Beat egg whites until foamy. Gradually add sugar. Continue beat ing until stiff peaks form. Fold egg whites into milk-egg mixture. Spoon into 8 lightly buttered 5-ounce custard cups. Place cups in pan with 1-inch deep hot water. Bake in moderate oven (350 Fd 30-40 minutes. Remove from oven. Cool 5 minutes on wire racks. Turn puffs out onto serving plates. Top with Orange Sauce. Garnish with chocolate curls or grated orange rind. CHANGE SAUCE Combine b cup sugar. 3 tablespoons cornstarch, and J* teaspoon salt in medium saucepan. Add 1-1/3 cups yjv diiutcd Carnation Evaporated Milk and 1 cup orange juice Cook over low heat until slightly thickened (10-15 minutes), stirring constantly. Remove from heat. Beat •Tinall amount of cooked custard mixture into 2 beaten egg yolks. Pour back into remaining custard in saucepan. Return to heat. Cook 3 to 4 minutes longer. Add Vi tea spoon vanilla and cool to lukewarm. Serve over Orange Puffs.
