New Emphasis On Home Canning Triggered
By Current Drought Conditions

drought conditions continue
to affect a large part of our
nation's farmland. But con
sumers don't have to be the
victims of these harsh condi
tions. Instead, they can take
matters into their own hands
by home canning fruits and
vegetables now to lessen the
squeeze in the months and
perhaps the year ahead.
According to Charles V.
Hall, Department Head of
Horticulture at Iowa State
l. Diversity, the drought will
have a long-term effect on
perennial crops such as as
paragus, rhubarb, horseradish,
strawberries and other types
of berries, in addition to fruit
trees. These types of crops
“build reserves” from year to
year, and the damage to this
year’s crops will diminish next
year's supply. Rosie Lerner,
U.S.D.A Extension Specialist
in home horticulture at Purdue
University, said that almost
all crops throughout the mid
West are being affected by the
drought, particularly tomatoes,
peppers, com and squashes.
One of the ways consumers
are ensuring the availability
of their favorite vegetables
and fruits at low prices is
through home canning. In
fact, according to a recent
Gallup survey, one out of four
households in this country
is canning vegetables and
fruits from their own gardens
or produce purchased from
