ditives for stabilizing whipped
cream. Cream with the highest fat
content (30 to 40 percent) is most
stable when whipped. Have both
cream and bowl well chilled and beat
at high speeds. Low speeds and
overbeating may cause cream to
separate. Whipped cream generally
can be stored up to two hours in
refrigerator. For longer storage,
dollop onto aluminum foil to freeze.
